I struggled with what to name this totally decadent cabbage salad. I posted on Facebook that I didn’t know what to name it. I got some great ideas and suggestions from my foodie peeps after describing the ingredients and sharing a photo.

After much deliberation. After having three servings the first day I made it. After having three more servings on the second day when it was just as good. No better in a different way. I decided that I was being somewhat naughty gobbling up this salad and not feeling one iota of regret or guilt!

Crunchy and packed with unique flavors, this dressing whisks into the most beautiful creamy off white sauce. You can eat it be the spoonsful. It would be lovely on fresh fruit or a bowl of arugula, watercress or accompanying some spicy grilled shrimp, tail on and daintily dipped into the sauce! Yes, this is the naughty and nice girls’ salad that is perfect for a PJ party, girls’ night, or no reason at all~enjoy! xoxo ~peace & cabbage xoxo ally

Yield: 8+

Ingredients

  • 8 cups savoy cabbage, loosely packed and shredded
  • 1 cup cucumbers, diced (skin on—use English cucumber)
  • 1 cup fennel & fronds, sliced thinly
  • 1/3 cup green onions, with tops, sliced thinly
  • 1 cup dried cranberries
  • ½ cup dried mangoes, diced
  • 1 cup parmesan reggiano, freshly grated
  • ¼ cup capers, drained
  • DRESSING:
  • 1 tsp. sea salt
  • 1 tsp. coarse ground pepper
  • ½ cup Greek yogurt, plain
  • ¼ cup fresh ginger, grated
  • 2 Tbl. Garlic, minced
  • 1/3 cup apricot fruit jam
  • ¼ cup extra virgin olive oil
  • 2 tsp. serrano pepper, minced
  • 2 lemons, juice

Instructions

  • In a very large bowl, comine the cabbage, cucumbers, fennel, green onions, cranberries, mangoes, parmesan, caper and toss together with your hands.
  • In a medium size bowl, combine the salt, pepper, yogurt, ginger, garlic, jam, olive oil, serrano pepper and lemon juice. Whisk together until a smooth creamy mixture.
  • Pour about 2/3 to ¾ of the dressing on the salad and toss well. Reserve the remaining dressing for individual drizzles when serving.
