Oh, gosh, what’s better than a big bowl of belly-warming delicious soup! I don’t thing much of anything!

And, some of my favorites are my kale soup, Tuscan chicken soup, and best veggie soup. Then probably my most often made soup? The healing chicken soup! It’s got those ingredients that will boost your immune system! 

Tuscan Potato Soup Recipe

You don’t have to wait until you have leftover turkey from Thanksgiving to make my Tuscan Turkey Potato Soup! Substitute chicken or use ground turkey! 

Now if you want a Tuscan soup that’s creamy and all potato goodness, then here you go! It’s like a she crab soup without the crab! Yes, I created this recipe while in Tuscany and having eaten several times at a little family-owned restaurant in Panicale. OMG, it was simple divine! 

Old Fashioned Italian Potato Soup

What makes this soup so fabulously tasty! Take a look at the ingredients. You’re using beef bone broth and bone broth protein supplement. Yes, it’s important to have these staples in your pantry. Making this Italian Potato Soup is so simple. One pot. And, putting in the ingredients!

Simple Potato Soup Recipe

Honestly, this is probably one of the simplest potato soup recipes I’ve created. I love the tomato base. And, another flavor booster is the entire sprig of sweet basil you’re putting in the soup to cook. Once it’s all cooked, just remove the stems, but pluck those leaves off and leave them in the soup. 

Meatless Italian Soup

Now if you’re intent on adding meat to this soup, no problem. You could do a ground pork or beef and cook in another skillet then add to the soup. Another option would be to use a chicken sausage, sauté and cook in another skillet then add to the soup. Yes,  you’ll go from meatless Italian soup to meat packed Italian soup!

The Best Meatless Italian Potato Soup

Yield: Serves 6+

Ingredients

  • 2 boxes (16.9 oz.) beef bone broth, Kettle & Fire
  • 2 scoops unflavored Paleo Valley bone broth protein supplement
  • 1 can (28 oz.) Italian Roma tomatoes, mash tomatoes + 3 cups water to rinse can and for additional liquid
  • 4 fresh basil stems with leaves, don't remove leaves from stems
  • 2 Tbl. nutritional yeast
  • 2 Tbl. Italian seasoning mixture
  • 1 Tbl. ground cumin
  • 2 tsp. smoked paprika
  • 1 tsp. coarse ground pepper
  • 1 1/2 tsp. sea salt
  • 1 tsp. red chili paste
  • 3 Tbl. anchovy paste
  • 1 1/2 cups sweet onions, diced
  • 6 cups Yukon potatoes, skin on, cut into about 2" cubes
  • 8 oz. fresh baby spinach
  • Freshly grated parmesan reggiano

Instructions

  1. In a large stock pot over medium high heat, put the bone broth, tomatoes, water, and bone broth supplement/ Cover and let it come to a boil for about 15-20 minutes. Reduce heat to medium and cook another about 10 minutes.
  2. Add the basil, nutritional yeast, cumin, paprika, pepper, salt, chili paste and anchovy paste. Blend, cover and let this simmer about 15 to 20 minutes.
  3. Add the onions, potatoes and cook until the potatoes are tender, about 25 to 30 minutes. Remove the basil stems and discard, but be sure to leave the leaves in the soup.
  4. Right before serving add the spinach and parmesan. Blend. Let the spinach wilt. Serve immediately.
