Now there’s really nothing to this recipe for smoked salmon bagel. If you can find real New York Deli bagels, bonus! If not, then buy the freshest you can find. And, don’t limit yourself to just red onion slices and capers. Think outside the box. Kosher dills. Olives. Fresh cucumber slices. Microgreens. Mung beans. Thin radish slices. And, more. Anything stacked on a fresh toasted bagel with cream cheese and smoked salmon, well, it’s gonna be amazing!

Start your day with one easy simple smoked salmon bagel! It's minimal cooking. Just soft boiling an egg. And, it's fast, delicious & healthy!

Ingredients

  • 1 bagel, toasted, save the underside of the bagel for later
  • 3-4 Tbl. whipped cream cheese
  • 3-4 thin slices smoked salmon, store purchase
  • 1 egg, soft boiled or to your finished doneness
  • 1 cup fresh spinach, packed
  • 3 Tbl. olives, green and black sliced
  • Fresh cracked pepper

Instructions

To cook a soft boiled egg. Heat a small sauce pan of water (enough to adequately cover the egg(s)) on high heat. Let it come to a boil. Put the egg(s) on a large spoon and gently immerge in the boiling water. Set the timer for 8 minutes. Remove, drain hot water and put cold water over eggs (in pan) to stop the cooking. When cooled somewhat, peel.

On a plate, put the fresh spinach.

Slather the toasted bagel (use the top side of the bagel for toasting) with the cream cheese. Fold the salmon pieces on top the creamed cheese. Top with olives and cracked pepper. Put on top the spinach.

Put the egg on the plate. Salt and pepper to taste.
