Salmon with Lemon Dill Sauce

UNcomplicating your life. That’s what this recipe is all about. 

Baked Salmon

Baking salmon takes little or no effort. It’s one of my favorite ways to prepare salmon. And, with the sauce that you’re massaging into the flesh of the salmon, you’re getting even more intense flavor. 

Oven Baked Salmon

Oven baked salmon allows you to cook you salmon to your desired finish. For my family, we like the centermost part moist and translucent. If you want your salmon more well done, then no problem. Just cook a little longer. 

How Long to Bake Salmon

Depending upon how you like your salmon determines how long you’ll cook it. Using a meat thermometer, I like to have mine at 135 to 140 degrees internal temperature. Be sure to insert your thermometer into the thickest portion of your salmon. Many chefs recommend salmon be medium to medium rare. Again, it’s up to you and your palate. That’s all that matters! 

Best Oven Baked Salmon Recipe

Make sure you let your salmon come to somewhat room temperature before popping it in the oven to bake. So take it out of the refrigerator and let it sit for about 18 to 30 minutes to take off that chill. 

Baked Salmon Filet

Some might prefer to pre-cut the larger salmon filet into serving size pieces. But, I just don’t like doing that. For me, with a smaller filet, feeding two to three people, like I’m using in this recipe, I leave it whole. Plus, when you’re scoring and using this technique for the sauce, it’s best to have the large size file.

Yield: Serves: 2-3 folks

Ingredients

  • Preheat oven to 400
  • 1 to 1.25 lb. salmon filet, skin on
  • 1 cup Greek yogurt, plain
  • 3 Tbl. mayonnaise
  • 1 lemon, juice zest
  • 2 tsp. sea salt, divided
  • 2 tsp. pepper, divided
  • 3 Tbl. fresh dill, chopped + more for garnish
  • 3 Tbl. extra virgin olive oil
  • Assortment of Fresh vegetables, zucchini, cauliflower, Campari tomatoes, sliced in halves

Instructions

In a small bowl blend together the yogurt, mayo, lemon juice/zest, one teaspoon salt, one teaspoon pepper. Set aside.

Put the salmon on a parchment lined cookie sheet. Score the meat side making criss cross incisions (about 1/4" deep) in the salmon.

Take about half the yogurt/mayo mixture and slather into the salmon working into the cuts. Sprinkle the top with fresh dill.

Toss the veggies in the olive oil, salt and pepper. Put on the same cookie sheet with the salmon.

Bake in a preheated 400 oven for about 20 minutes. Remove and let it set for a few minutes then serve.
