County Fair Carrot Pineapple Cake

Yield: One Bundt Cake

Ingredients

  • 1 cup carrots, finely shredded
  • ½ cup crushed pineapple, drained
  • 1 cake mix, white or yellow, good brand. I used Purely Simple by Pillsbury.
  • 2 tsp. ground cinnamon
  • 8 Tbl. butter, salted & room temperature
  • 3 eggs, beaten
  • 1 cup coconut milk, unsweetened
  • 1 ½ cups walnuts, chopped

Instructions

Combine the carrots and pineapple in a small bowl and blend together.

In a large mixing bowl, put the cake mix, cinnamon and butter. With a hand mixer on medium low speed blend together about 60-90 seconds.

Combine the eggs and coconut milk and whisk together. Pour into the dry mixture and blend. Add the carrot/pineapple mixture and blend about 60 seconds on low with the mixer.

Fold in the nuts.

Grease well your bundt pan. Dust with flour. Pour in the batter. Bake in a preheated 350 about 40-45 minutes or until a toothpick (or about 6” skewer) comes basically clean.

Remove to a cool rack for at least an hour before serving.
