It’s always good to have one of those best coffee cake recipes in your stash of favorites. And, hopefully, this pineapple cinnamon coffee cake will make the cut.

You well know that I do a lot of recipes for pineapple. I mean for seven years now, I’ve been lucky enough to be Dole Sunshine’s brand ambassador and culinary consultant. During this time, I’ve cooked with a lot of pineapple in both sweet and savory dishes. Each and every recipe truly is fabulous and easy because that’s what Dole Sunshine wants. Easy healthy and simple to make!

Pineapple Coffee Cake

Pineapple always makes cakes taste a little moister and tastier. I remember growing up, Mom would use crushed pineapple often in her holiday desserts. Getting canned goods into our pantry was important because were didn’t have a big grocery store nearby. We’d have to drive about 45 minutes to get to an A & P, and I’m not sure those stores are even still operational! 

Pineapple Coffee Cake with Cake Mix

Using a cake mix to make this pineapple coffee cake speeds up the process. And, on a weekend morning, you don’t want to be stuck in the kitchen. You want something quick and easy that’s super tasty and yummy. Plus, you want something that keeps well for a day or two. Well, this cake is the cake for you. 

Crushed Pineapple Recipes

Now I used pineapple tidbits, but you could surely use crushed pineapple in this recipe as well. And, if all you have are pineapple rings, well, then just chop them up. That’s the great thing about pineapple, it can be swapped for different cuts. I’ve even used pineapple tidbits for an upside down pineapple cake. Check it out!

Simple Coffee Cake Recipe

When weekends come and probably twice monthly, I like to invite a few friends over for brunch and, of course, there’s a simple coffee cake recipe that’s on the menu. It’s fun to put the spread out. And, when folks leave, each gets their own little ‘puppy’ bag with a few extra slices of the coffee cake to take home. 

Almond Streusel Topping

Now the health virtues of almonds are well known. So, I try to incorporate almonds in lots of dishes. From a bowl of cereal, yogurt to salads and side dishes, you can always throw in sliced almonds. And, this topping is perfect even for a few scoops of ice cream! What you could do is just ‘roast’ on low heat in a skillet the oats/butter and that would kind of cook them toast them, then add the other ingredients.

Yield: Makes an 8 x 10 baking dish

Ingredients

  • Makes: One 8 x 10 baking pan
  • Preheat oven to 350
  • 2 (7 oz./each) packages Martha White Apple Cinnamon Muffin Mix
  • 1 ½ tsp. ground cinnamon, divided
  • ¾ cup milk, whole or 2%
  • 1 cup Dole Packaged Foods Pineapple Tidbits, drained well
  • 1 cup honey crisp apples, small dice
  • TOPPING:
  • 1 cup old-fashioned oats
  • ¼ cup dark brown sugar
  • ¼ cup sliced almonds
  • 2 Tbl. butter, salted, melted

Instructions

Put the muffin mix in a large mixing bowl. Add one teaspoon of cinnamon and blend. Add the milk and blend well.


Add the pineapple tidbits and apples and blend.


Pour into a well-greased baking pan (or line the baking pan with parchment paper).


In a small bowl, combine the oats, brown sugar, almonds and melted butter. Blend well. Sprinkle on the top of the batter.


Bake in a preheated 350 oven for 30 minutes. Remove to a cooling rack. Slice and serve with whipped cream!
