Types of Pies

So many types of pie. And, pies don’t even have to be in a pie pan or pie plate to be considered a pie. According to Wiki, “A pie is a baked dish which is usually made of a pastry dough casing that contains a filling of various sweet or savory ingredients. Sweet pies may be filled with fruit (as in an apple pie), nuts (pecan pie), brown sugar (sugar pie) or sweetened vegetables (rhubarb pie). Pies are defined by their crusts.”

Apple Pie

Not sure about you, but according to some pie experts, the apple pie ranks as the best most popular pie in America. Yes, that’s about as American as ‘apple pie’!

Apple Galette

Galettes. What are galettes. Nothing complicated here. The difference between a pie and a galette is that a galette is a round pastry, fruit filled and it’s baked on a baking sheet. The sides of the dough, about 1 1/2 to 2 inches, are wrapped up and around the fruit.

Apple Slab Pie

Now, an apple slab pie, well, that’s a rectangular shape and the slices are cut from that. It usually can feed quite a few. And, it can be baked on a cookie sheet too or a rectangular baking dish. 

Quick Apple Pie Recipe

Listen, this recipe is forgiving. There’s not much way that you can mess up. To me, making a real pie from scratch, including the crust, well, that’s an art. Hey, I’ve been to the Pillsbury Pie Contest as a reporter and I’m telling you, there are some serious pie gurus there. People who’ve crafted their skills for years and years. I’m not even in their league.

This apple slab pie got rave reviews. As you’ll see it’s super easy to make. And, I love the fact that it keeps well in a cool place, not necessarily refrigerated for a day or two. 

Easy Apple Pie Recipe with Premade Crust

Premade pie crusts make baking so much easier. I know that homemade pie crusts are superb, but, for me, like puff pastry, I use refrigerated pie crusts because they have come so far in quality. Actually my favorite refrigerated pie crust is Wewalka! Check them out. Excellent quality! 

Quick Apple Pie

So when you need a quick apple pie, look no further. And, don’t forget you could swap apples for pears! Also, have a look at the apple jack tart for a mouth-watering breakfast.

Yield: One large slab pie

Ingredients

  • Preheat oven to 375
  • 2 refrigerated pie crusts, about room temperature
  • 6 Tbl. butter, salted, melted
  • 2 tsp. cinnamon, optional
  • 1 large lemon, juice and zest, divided
  • Pinch salt
  • 4 large apples, washed, skin on, cut into very thin slices
  • ยพ cup + 2 Tbl. sugar, divided
  • 2 Tbl. arrowroot flour
  • 1 egg, white only
  • Powdered Sugar Dusting, optional

Instructions

  1. Put parchment paper on a large cookie sheet (about 12 x 18”). Put the two pie crusts on the sheet. Overlap somewhat. Then mold together as one piece and work into a more rectangular shape.
  2. Mix the cinnamon in the melted butter and spread about four tablespoons on the pie crust. Sprinkle on one-fourth cup of sugar.
  3. Put the lemon juice and salt in a large bowl. Toss the apple slices in the juice coating well.
  4. Lay the apple slices on the dough leaving about 1 ½” to 2” from the edges. Sprinkle on the lemon zest. Drizzle on the remaining melted cinnamon butter.
  5. Mix one-half cup sugar with the arrowroot. Sprinkle all over the apples/pastry dough.
  6. Fold dough over around the edges, pinch/crimp and make a border. Use a pastry brush to coat the exposed dough then sprinkle on the remaining sugar.
  7. Bake in a preheated 375 oven about 30 to 35 minutes or until the crust is golden brown. Remove and let cool before cutting slices.

Notes

You could also use the croissant roll dough, pizza dough or puff pastry for this recipe. The pie crust dough is more 'flaky' like a real pie crust. Puff pastry is really flaky.

And, a pizza dough would be more like a bun/roll texture. But, I'm thinking all would be an adventure to try!

    1. Meeeeechelle! Thank you, luv! I like to sometimes use a combo of two apples. A granny smith which is tart. Then something super sweet and juice (and crispy, but by the time it’s baked you lose that crispy of course). Fuji, Honey Crisp, Cameo, Jazz, Sweet Tango, Pink Lady, Envy. And, if you every run into a ‘Rave’ apple, buy! OMG, so juicy it’s like I need a straw to sip when I bite into the apple!! So glad you’re here! xoxx ally

  4. I followed the advice of others and added 2 tbsp flour and 2 tbsp lemon juice and about 1 tsp of nutmeg. My husband and 2 kids LOVED this. My husband said that his whole life, apple pie wasn’t his favorite, but if he had been given THIS pie as a child, it would have been his favorite all his life. Next time, I might add another tbsp of flour just to thicken it up a little bit more, but the flavor was wonderful.
