Yield: About 6+ servings

Ingredients

  • Preheat oven to 425
  • Serves: 4+
  • 2 to 2 ½ lbs. chicken tenders
  • ¼ cup extra virgin olive oil
  • 1 Tbl. + 1 tsp. Organic Mango Habanero Seasoning Blend, several brands available at WalMart
  • 1 tsp. fresh ground pepper
  • 2 oranges, seedless, large, divided
  • ASSORTED SIDES: Dill pickles, Pepperoncini, Sriracha, Olives, Olive Deli Mixture, Thinly sliced cucumbers, Dipping sauces, and more!

Instructions

  1. Line a cookie sheet with parchment paper.
  2. Slice one orange very thinly into round slices (about 14-16 slices). Space out on the parchment paper.
  3. Put the tenders in a large mixing bowl. Add the olive oil and toss and coat each. Add one tablespoon of the mango habanero seasoning mixture and toss/blend.
  4. Place the tenders on the cookie sheet atop the very thin orange slices. Sprinkle with remaining mango habanero mixture and the pepper.
  5. Squeeze the juice on one-half orange on the chicken tenders. Bake in a preheated 425 oven for 20 minutes. After 20 minutes turn oven to broil for about 3-5 minutes to brown tenders. (Cookie sheet should be on lower shelf not close to broiler.)
