Chicken Linguine with Peas and Green Onions

Yield: About 4 hungry folks!

In no time at all, you'll be chowing down on this super easy and quick chicken linguine dish! It's like eating in a fancy Italian eatery!

Ingredients

  • 1 lb. chicken filets, boneless and skinless, if thick, butterfly and to make thinner to cook faster
  • 3 Tbl. olive oil
  • 2 tsp. sea salt, divided
  • 1 tsp. pepper
  • 8 oz. linguine pasta
  • 3 cups chicken stock
  • 1 package (11 oz.) Campbell’s Sweet & Sour Chicken Sauces
  • ½ cup heavy cream
  • ½ tsp. red chili flakes
  • ¼ cup freshly grated parmesan + more for garnish
  • 3 cups frozen petite peas
  • 6 green onions, sliced thinly with some of the green tops

Instructions

Use one teaspoon of salt and pepper to coat the chicken filets. Set aside. In a heavy cast iron skillet (10”+) on a medium high blaze, let the skillet get hot. Add the olive oil and let it get heated. Add the chicken.

Pan sear on the first side about four to five minutes. Flip and pan sear on the other side four to five minutes. Chicken should be golden brown. Turn off blaze. Cover and make pasta.

In a large (12” diameter) heavy deep skillet over medium high heat, put two and one-half cups of chicken stock, one teaspoon of salt and bring to a simmering boil. Add the pasta.

Take tongs or a pasta fork to move pasta around as it cooks. Keep moving the pasta around so it doesn’t stick. Continue to simmer boil and cook for about 8-10 minutes. When pasta is tender (al dente) turn off the blaze and leave pasta in the skillet.

In a large measuring cup, empty the contents of the sweet and sour sauce. Put the heavy cream in the plastic package and use a spoon to blend around getting out all of the sauce. Pour this into the cup and add one-fourth cup of parmesan and the red chili flakes. Whisk together well.

Pour on to the pasta and coat well. Add the peas and green onions and blend. Turn blaze to warm (very low). Cover and let the pasta stay warm.

When ready to serve, slice the chicken on a diagonal into pieces. Serve the pasta with chicken on top and additional parmesan.
