Aussie Grassfed Beef Grilled Flank Steak Bundles

Yield: About 6+ servings

I call this Ausie grassfed beef grilled flank steak bundles NO GUILT eating! Go back for seconds, grab another little bundle of healthy!

Ingredients

  • 2 lbs. Aussie Grassfed Beef Flank steak, cut at an angle about every one inch
  • 1 ½ tsp. sea salt
  • 1 ½ tsp. coarse ground pepper + more for garnish
  • 12 potato wedges, about 2” thick and 4-6” long
  • 12 carrot wedges, about 4-6” long
  • 12 mini zucchini, or zucchini strips about 4-6” long
  • ¼ cup extra virgin olive oil
  • ¼ cup butter, salted, melted (optional)

Instructions

  1. Presoak for about an hour 12 skewers in water.
  2. Heat an outdoor gas grill to about 450 to 500.
  3. Coat the Aussie Grassfed Beef flank steak with the salt and pepper on both sides. Massage and rub into the meat. Let it sit about 30 minutes to come to room temperature.
  4. Put the potato wedges in a glass bowl with about ¼ cup water. Cover. Microwave on high about 4 minutes. Check to see if they are tender and can be somewhat pierced with a toothpick. If not, microwave a little more. You want your potatoes slightly ‘firm’. They will continue to cook on the grill.
  5. Put the carrot wedges in a glass bowl with three tablespoons of water. Cover. Microwave on high about 3 minutes. The carrots can be slightly al dente (not thoroughly cooked). Do not precook the zucchini.
  6. Take a flank steak strip. In the center put one potato, carrot wedge{s} and a mini zucchini or strip . Wrap the flank steak around it lapping over the meat.
  7. Slide a presoaked skewer through the center. Repeat with the meat and veggies putting them all on a parchment paper covered cookie sheet. Drizzle with olive oil.
  8. Drizzle the flank steak bundles with the olive oil. Dust with more coarse ground pepper. Using tongs, place on a hot grill for about three minutes. (Do not crowd.) Then flip the flank steak bundles and grill another three to four minutes.
  9. Remove the bundles to a tray. Drizzle with melted butter (optional). Cover with foil and let them rest about 3-5 minutes. Serve immediately.

Notes

If you prefer to use frozen French fries, cook according to package directions and put a small ‘bundle’ of them in for the potatoes.

You can substitute regular, no mini, zucchini. Or you can omit all together. Your choice. Same with carrots.
