What makes this recipe so much fun is that you don’t have to have any baking skills whatsoever to be successful with it. Yes, it’s one of my rustic rogue dessert/pastry recipes that I’ve come up with because I want to make life easier for you, and me!

Now, there’s nothing wrong with a lot of complicated steps in a dessert, but that just doesn’t work into my lifestyle or cooking skill level, so I go for simple, organic, and quick.

Easy Peach Pies

You’ll serve these easy peach pies warm or you can leave on your counter, put on a pretty cake plate and cover, and eat a room temperature. When I serve them warm, I’ll top with something.

Most folks will go for ice cream, but as a change, why don’t you try what I’ve used, that’s gotten rave reviews, creme fraiche! Yes, it’s not as ‘sweet’ and it adds that bit of creaminess that you might be craving.

And, try to find peaches in season like sweet Georgia or South Carolina peaches or Palisades peaches!

There are so many textures in these upside down peach pie mounds. Sweet. Crispy. Crunchy. Juicy. You’ve got that dougheeeee puff pastry goodliness. And, the carmelized ozzzzing of the butter and brown sugar as it bakes makes for the most delectable paper thin caramel like candy! I mean don’t throw out that parchment paper until you’ve scraped up every last bit!

Best little peach pie recipe you'll ever taste! Only a few ingredients and you're set. Individual peach pie mounds. Perfect for any occasion!

Ingredients

  • Preheat oven to 375
  • 3 peaches, wash and clean peaches, slice in halves, yielding six halves, skin on, can also cut in peach slices
  • 1 large lemon, juice only
  • 1/2 cup coconut sugar
  • 1 tsp. ground cinnamon, optional
  • 6 Tbl. butter, salted, chilled, cut into six pieces
  • 3 (3 x 9") puff pastry pieces, cut into six equal size pieces, about room temperature OR one refrigerated roll out puff pastry
  • 1 egg
  • 2 Tbl. sugar
  • Powdered Sugar Garnish (optional)

Instructions

  1. Put the peaches, fruit side down, in a pie plate with the lemon juice. Coat with juices to keep the peaches from turning brown
  2. On a parchment paper lined cookie sheet, place the six pieces of chilled butter. Leave adequate space between each. (If using peach slices, put 4 to 5 slices per/hand pie.
  3. In a small bowl, mix together the sugar and cinnamon.
  4. Put about two tablespoons of the brown sugar mixture atop each pat of butter. Scoop in and around all sides.
  5. Place a peach half, fruit side down, on each mound of butter/sugar. Press down gently.
  6. Take a piece of the puff pastry and mold around the peach tucking in and making a 'tent'.
  7. Using a pastry brush, coat each of the puff pastry peaches with egg wash (white or white and yolk blended). Sprinkle equal amounts of sugar on and around each of the mounds.
  8. Bake in a preheated 375 oven for about 22 to 25 minutes or until golden brown.
  9. Remove and let the peach pie mounds cool a few minutes. You can then take a flexible spatula and remove each.

Notes

The butter/brown sugar mixture will ooze during baking. No problem. That will make a caramelized like brittle 'candy' in and around the peach mound.

If you don't use all the brown sugar/cinnamon mixture, just put it in an airtight container and use for something else, like toast!

  3. Can you freeze the peach hand pies?

    1. Hi, Paula, I’ve not done that. Not sure they’d be nearly as good as when they’re fresh out of the oven. I think you’ll compromise some of the texture of the puff pastry when freezing, but, hey, it’s worth a try. And, what I’d do is reheat them on low and slow in the oven or a toaster oven. Please let me know if you try freezing and how they fare! xoxx ally

    I made these after watching you make them on Instagram for Bobby and family. They were a hit! I sliced the peaches like you did. What other fruits can be used? If I make it with apples, should I saute them first?

    1. Michelle! You’re genius! Yes, apples are great. I love sweet crispy crunchy slightly tart ones. You can wash well, slice in halves, then in thin slices, or you can dice then mound and proceed like the peaches. I’ve done pears as well. Frozen cherries can work well. I toss those frozen cherries in a couple of tablespoons of flour or arrowroot. They tend to really ooze liquid when baked and this flour toss helps with that. I’ve not done blueberries or blackberries, but, again, worth trying, luv! xoxx ally

    Hoping they turn out as nice as yours did. I do have a question tho…our peaches where I live have been horrible. Very dry and like cotton when you cut them. No flavor. I went ahead and used them anyway, but do you think frozen peaches would work? If so, should I thaw them first? Thanks again for an easy peezy recipe!

    1. Gay, by now you’ve eaten some of the hand pies! How were they? YES, you can certainly use frozen peaches and you don’t need to thaw. In the cooking process, they do that and are perfect. I use them in the off season when peaches are like you said, bland and unflavorful! Vanilla ice cream is awesome! xoxx ally

  8. These look so delicious! I have a question about the puff pastry sheets. The recipe says 3 (3×9) sheets, but your video showed you cutting one sheet. Are the sheets layered before cutting and then does each tent consist of 3 layers of pastry? Thanks!

    1. Hi, Linda, thank you! The sheets? It depends upon the brand of puff pastry you purchase. What you’re seeing here is the ‘refrigerated’ roll out type of puff pastry. Then there is the frozen puff pastry (Pepperidge Farms) that is in three 3×9″ strips. These can be molded together into ‘one’ large piece of course. I prefer the refrigerated, but if I can’t source, I’ll get the frozen, thaw to about room temp and proceed. The big thing is have as many small cover pieces as you have peach mounds. Hope this helps! xoxx ally

    1. Hi, Lindsey, it’s right there in the instructions, #4. I’ve added the sugar (and cinnamon if you wish) in two ways. Putting it atop each peach mound. Or, tossing all the peach slices (or halves if that’s what you have) in the sugar then creating mounds. Hope this makes sense! xoxx ally

    1. Hi, Olivia, I’ve had a few folks use phyllo dough, and it seems to work. I haven’t tried yet as I prefer the more ‘dough’ result of the puff pastry. xoxx ally

  12. The ingredients say coconut sugar but the instructions say brown sugar. Also the instructions say 2 tbsp brown sugar on each peach mound but in your video with Bobby, it looked liked you used about a half of a tablespoon. 2 tbsp seems like a lot. Thanks for any clarification. Can’t wait to try these!!

    1. Hi, Kathy, I corrected that. If you choose to use cinnamon (sometimes I don’t b/c I just want the complete taste of the peaches), you can mix w/the sugar. Folks can use any type of sugar they wish. I prefer coconut b/c it gives a little ‘nuttier’ taste I think (just my tastebuds probably). And, then on the amount of sugar, yes, you can regulate depending upon the quality of the peaches. These that we had w/Bobby were super juicy and naturally sweet, so we cut back on the amount.     1. Yes, you may get only like 3 pieces from one roll out pie crust. I love the puff pastry roll out refrigerated sheet. I can usually get 9 small squares from it to use. Hope this helps! They’re deeeelish! xoxx ally
