Honestly, I have no idea why everyone doesn’t make their own croutons. 

They’re superbly better than store bought. Plus, they’re so much cheaper.

How to Make Homemade Croutons

Making homemade croutons is about as easy a frying an egg or pouring a glass of water. 

All you do is season the day old bread. Bake. Brown under the broiler if you want more golden browning. Then toss in some yummy grated parmesan. I mean, does it get any easier!

And, I like to have big Texas size croutons. 

My favorite bread to use is a sourdough. So, I keep my eye out at the deli of grocery stores for mark down. No way am I using fresh bread for the croutons. It’s just like my amazing holiday dressing, it’s all about day old or two or three day old bread! 

Parmesan Croutons Recipe

It’s important to toss the parmesan, finely grated, as soon as those toasted croutons come out of the oven. 

And, don’t skimp on the parmesan. You can purchase a great brand grated (like Boars Head). Sometimes your deli has freshly grated parmesan. Or you can grate yourself. You’re not using a boatload, so save that really great parm for things like these croutons.

These croutons are great on so many things. They’re just not for salads, although if you’re making my Simple Garlic Lemon Mustard Vinaigrette, you will want to sprinkle on a handful! This salad dressing had been made by thousands of followers on social media, and, I can say frankly that it’s gotten unbelievable reviews! 

As you can see from this picture below, I used the croutons for breakfast. Yes, with some chopped up Campari tomatoes, fresh basil, EVOO, lemon juice and croutons and my aaahhhhmazing soft boiled eggs. Yes, another recipe that you MUST try! Perfection probably every single time you do soft boiled eggs!

How to Make Homemade Croutons

Yield: Makes: About 8 to 10 cups

Ingredients

  • Preheat oven to 400 then to Broil to brown
  • 8-10 cups of day-old bread, preferably sourdough, cut into about 1 ½” croutons
  • ½ cup extra virgin olive oil
  • ¼ cup butter, melted, unsalted
  • ½ tsp. sea salt
  • ½ tsp. coarse ground pepper
  • ½ tsp. red chili flakes, optional
  • 1 tsp. Italian seasoning
  • ½ cup fresh herbs, finely chopped, packed, combination of basil, thyme, chives, parsley, dill, mint, oregano, tarragon, etc.
  • ½ cup parmesan, grated

Instructions

  1. Put the bread croutons in a large bowl. In a large measuring cup, whisk together the olive oi, butter, salt, pepper, red chili flakes, Italian seasoning and fresh herbs.
  2. Pour on the bread croutons and toss and blend well. Put the seasoned croutons on a parchment paper lined cookie sheet. Bake in a preheated 400 oven for 18 to 20 minutes.
  3. Turn to broil (pan should be at least 12-18” from broiler) if more golden browning is desired. Watch carefully. Takes only a few minutes.
  4. Remove and sprinkle with the grated parmesan. Toss and blend. Store in an air tight container.

Notes

You'll probably not have perfect 'squares' of bread. There will be crumbs, bits and pieces. It's all good! Perfect for scattering on soups and salads!
