Easy Homemade Blueberry Pie

It’s so easy to make a blueberry pie when you use puff pastry! 

Here’s one brand of gluten free puff pastry. Yes, there are several boxes, but if you want to make more of my recipes using puff pastry, then it’s wise to have it in your pantry! 

And, with the flour required for this recipe, well,  you could add some else to thicken, like cornstarch. I’m using flour because for my family, we don’t need to do gluten free. Everyone’s different!

For me, open faced pies are really fun and easy to make. You just can’t ‘mess up’ on them. Like a galette or a flab pie, they feature the fruit you’re using. 

And, my thinking is why not showcase the fruit by being able to see it.

What makes this the absolute best open faced blueberry pie is that it’s choked full of blueberries. 

And, you can make this pie with only four other ingredients. We’re basically just going to sweeten those blueberries somewhat with coconut sugar. 

Open Faced Blueberry Pie Recipe

Alrighty, a full disclosure. This pie is not going to slice perfectly. In face, when you serve it, don’t call them slices because they’re more like big scoops of deliciousness. 

Yes, you’re going to cut like into pieces. But, when you remove it from the pan, well, have a nice flexible spatula or big scoop spoon. 

It’s one of those ‘pies’ that just ooozes with juices and berries.

What’s the difference between a pie and a cobbler?

For me, not much, but for the highly trained patisserie chef, a lot. 

According to Discover South Carolina:

The biggest difference is that a cobbler is so easy to make (easier than pie!). While a pie is made with a bottom crust and often a top crust, the dough and the fruit filling cook together in a cobbler.

You could actually call this a slab pie, too. And, I love me a good slab pie. I usually make them on cookie sheets rather than a baking dish. That’s basically the only difference in my style of baking a slab pie vs. a open faced pie.

Easy Blueberry Pie Filling

There’s basically not much to this blueberry filling. 

It’s all blueberries. And, since they’re full of liquid, we’ll need to add a thickening agent. Common thickeners for pie fillings are flour, cornstarch and tapioca. Just remember that all thickeners have pros and cons. The big trick is to use the right amount to get your desired thickness. For me, I don’t want an overly ‘thick’ filling.

As you see from my pictures, I’m garnishing the blueberry pie slice with unsweetened coconut shavings and fresh mint. 

You can add what makes you happy. Whipped cream! Vanilla Ice Cream. Gelato! Remember, it’s your masterpiece, so design it to represent you!

Easy 5-Ingredient Open Faced Blueberry Pie

Easy 5-Ingredient Open Faced Blueberry Pie

Yield: One baking dish about 9 x 11"

Ingredients

  • Preheat oven to 375
  • 6-7 cups fresh blueberries
  • 1/3 cup + 2 Tbl. coconut sugar, divided
  • 1 lemon, juice only
  • ¼ cup flour, all-purpose
  • 1 puff pastry, 9 x 9”, room temperature, stretched to about 12 x 16”
  • 1 egg white, egg wash for dough

Instructions

Preheat oven to 375. Grease well a 9 x 11” (outside dimensions) baking dish.

Put the blueberries in a large mixing bowl with the sugar, lemon juice and flour. Toss and blend well. Set aside.
Place the puff pastry in the greased baking dish. Sides will lap over.


Place the blueberries on the dough. Take the dough that’s lapping over and mold and crimp around the sides.
Using a pastry brush, coat the dough with the egg white wash then sprinkle with the remaining sugar on the dough and blueberries.


Bake in a preheated 375 oven for 40 to 45 minutes. Remove. Cool. Slice and serve.
