There’s nothing more filling and healthy than soups with red lentils. Or any lentil for that matter. 

Red Lentil Soup Recipe

This red lentil soup recipe is one of those that is super easy. It requires very little cooking skill. And, really in not time at all, you’ll be chowing down on the most luscious delicious soup you’ve ever tasted. 

Best Recipe for Red Lentil Soup

Now for me the best recipe for red lentil soup must include meat in it. When you add meat, you’ve got a meal. But, if you’d like to throw in shrimp, then that will work, too! Since shrimp cooks super fast, you’d put the shrimp in about 10 to 15 minutes before you’re ready to serve it. 

Recipe for Red Lentils Soup

This recipe for red lentils soup is going to use tasty spicy chorizo! If you’re not familiar with chorizo, it’s basically ground sausage with lots of heat from spices. It’s a Mexican kind of sausage and is simply versatile and tasty. 

Red Lentil Soup Slow Cooker

You could do this red lentil soup in a slow cooker. No problem at all. But, if you’re home and in the kitchen, then I’d suggest the stovetop because it cooks really fast and in about thirty to forty-five minutes you’ll have this meal ready. 

Red Lentil Soup with Lemon

A nice addition to your soup, try red lentil soup with lemon. Yes, just spritz some lemon on it and the citrus brings out more of the flavor. You could try lime also. Another thing I love to do, add a dollop of creme fraiche or sour cream. You could also use plain Greek yogurt. This will add some creaminess to your soup. 

Chorizo Soups

Chorizo soups are also fabulous with grated cheeses. Take your choice. An Italian parmesan. A crumbly queso fresco, which means ‘fresh cheese’. This is a Mexican cheese made from cow’s or goat milk. Even a drizzle of heavy cream would be fabulous.

Lentil soup with chorizo rounds out the soup to a meal. It’s filing and with a salad and baguette bread or cornbread, you’ll be rubbing your belly saying ‘Yummmm Yummmm!’

In essence, chroizo sausage can be used in so many recipes. From scrambled eggs to browning and using on pizzas, if you haven’t experimented with chroizo, get some because it’s perfect for so many recipes where ground meat is used, like meatballs!

Yield: Serves: 4-6 hungry folks

  • ¼ cup extra virgin olive oil, divided
  • ½ cup sweet onions, diced
  • 3 garlic cloves, peeled and thinly sliced
  • ½ cup celery, sliced
  • ¼ cup carrots, diced
  • 2 tsp. nutritional yeast
  • 2 tsp. smoked sweet paprika
  • 2 tsp. ground cumin
  • 1 tsp. sea salt
  • 1 tsp. pepper
  • 1 ¼ cup red lentils
  • 3 cups chicken stock
  • 1 can (14.5 oz.) diced tomatoes + 1 ½ cups water
  • 16 oz. ground chorizo


In a large deep skillet, put half the olive oil. Turn heat to medium. Add the onions, garlic, celery, carrots and sauté about three to four minutes.

Combine the nutritional yeast, paprika, cumin, salt and pepper in a small bowl and mix well. Sprinkle on the sauteed vegetables and blend.

Add the lentils, chicken stock, tomatoes and water. Turn heat to medium high. Cover with a lid. Bring to a boil for 5-7 minutes. Reduce heat to medium (simmering boil) and cook another 13 to 15 minutes. Check occasionally to see if you need to add any liquid.

In another skillet, add the remaining olive oil. Turn heat to medium high. Add the chorizo, crumble and brown. Takes about 5 minutes.

Scrape the chorizo from this skillet into the lentils. Reduce heat to medium low and cook another 10 to 15 minutes or until the lentils are tender.

Keep soup on simmer until ready to serve.
