This recipe for red lentils soup is going to use tasty spicy chorizo! If you’re not familiar with chorizo, it’s basically ground sausage with lots of heat from spices. It’s a Mexican kind of sausage and is simply versatile and tasty.

You could do this red lentil soup in a slow cooker. No problem at all. But, if you’re home and in the kitchen, then I’d suggest the stovetop because it cooks really fast and in about thirty to forty-five minutes you’ll have this meal ready.

Turn heat to medium. Add the onions, garlic, celery, carrots and sauté about three to four minutes. chorizo red lentil soup

Instructions
Combine the nutritional yeast, paprika, cumin, salt and pepper in a small bowl and mix well. Sprinkle on the sauteed vegetables and blend.
Add the lentils, chicken stock, tomatoes and water. Turn heat to medium high. Cover with a lid. Bring to a boil for 5-7 minutes. Reduce heat to medium (simmering boil) and cook another 13 to 15 minutes. Check occasionally to see if you need to add any liquid.
In another skillet, add the remaining olive oil. Turn heat to medium high. Add the chorizo, crumble and brown. Takes about 5 minutes.
Scrape the chorizo from this skillet into the lentils. Reduce heat to medium low and cook another 10 to 15 minutes or until the lentils are tender.
Keep soup on simmer until ready to serve.
