Now here’s a disclaimer. I’m not a beer drinker. Never have been. But, that was until I took a sip of this hard cider apple brew. OMG! Divine. Smooth and beautiful on the palate. I don’t know what I enjoyed more, sniffing the aromas after it was poured or sipping it. I’m taking a new look at craft beers for sipping and for creating recipes with them!

And, no doubt, by adding this beer to the cider stew we’ve got a dish that falls into the category of very different beef stew recipes. And, isn’t that what life’s about. Getting out of our traditional and old ways, well, at least sometimes (nothing wrong with traditions) and trying something new.

Basically, I’ve taken a good old fashioned beef stew recipe and modernized it with the addition of the craft beer. And, I believe that and the fingerling potatoes just makes this go from a peasant type of beef stew to an elegant swanky beef stew!

Recipe with beer are gaining in popularity. That’s because if you think about it, the array of beers out there for us to choose has grown exponentially. It’s like water. Water is now chic and glamourous and that’s the same with beer. Beer does more than you think in your cooking. And, honestly, don’t fret over the alcohol because it nearly disappears from the cooking process.

For me, Fall cooking means cranking up my oven and stovetop! The chilly temperatures outside mean we want cozy and warm inside. And, after you’ve made this beef stew recipe in your Dutch oven, open that oven door and let the heat snuggle up your kitchen with warmth.

Now I’ve made the stew beef seasoning mixture really simple for you. I’m packing in a lot of flavor and taste with just a few different ingredients, like cream of celery soup! Oh, gosh, does it add lots of deliciousness. 

Tasty Beef Stew Recipe

No doubt this tasty beef stew recipe will become a family favorite. I love serving it over a bed of greens. Why dirty another bowl with salad, and those greens wilt under the heat of the stew once poured over them. Top with some shavings of parmesan cheese, which melts like a snowflake. Have plenty of crusty warm baguette bread!

Yield: 8+ hungry folks

Hard cider apple brew beef stew is elevated traditional beef stew! Taste the subtle nutty earthy flavor of apple brew. Guaranteed a HIT!

Ingredients

  • Preheat oven to 425
  • 2 to 2 ½ lbs. beef, a more tender cut like NY Strip, Rib Eye, Sirloin
  • ¼ cup oil
  • 1 can (10 oz.) cream of celery soup + 1 cup water to rinse can and use in stew
  • 1 pouch (oz.) onion soup mix
  • 3 tsp harissa
  • 1 Tbl. nutritional yeast
  • 1 tsp. pepper
  • 2 tsp. salt
  • 1 can (28 oz.) whole tomatoes + 2 cups water to rinse can and use in stew
  • 4-5 cups fingerling potatoes, sliced lengthwise through the center
  • 5 oz. shitake mushrooms, sliced, can substitute another type of mushroom
  • 1 bottle (12 oz.) hard cider apple beer, can substitute non-alcoholic or 6 oz. apple juice + 6 oz. water
  • 16 oz. container pico de gallo, store bought

Instructions

  1. In a large stock pot over medium high heat, put the oil and let it get hot.
    Add the beef and brown/cook for about 10 minutes stirring and turning as needed.
  2. In a large measuring cup, whisk together the cream of celery soup, water, onion soup, harissa nutritional yeast, pepper and salt. Pour over the beef and blend.
  3. Add the tomatoes, water, potatoes, mushrooms and craft beef. Blend.
  4. Cover and cook in a preheated 425 oven for about 1 ¾ to 2 hours. Turn off oven.
  5. Remove stew and add the pico de gallo. Blend. Cover pot. Return to warm oven and let the stew ‘stew’ another about 15 minutes or so until ready to serve.
