I was once in a corn eating contest. Know how many ears I consumed in about 20 minutes? Seventeen! Yep, I love corn. And, by the way, I didn’t even win the contest!
As you can see, there’s lots of passion behind this recipe and any that I do with corn.

Summer Corn Salad
Nothing’s better than fresh summer corn. When we’re in Colorado we get corn from Olathe. OMG! It’s to die for.
Grown on the Western Slope, the popular Olathe corn is delivered to a variety stores from Alaska to Virginia. Harold said his company planted 20 percent more corn this year making the harvest one of the biggest yielding crops in years
Then when we’re in South Carolina, well, the silver queen corn is just like sweet juiciness with each bite.

Avocado Corn Tomato Salad
Another ingredient that you could add to this salad would be avocado. I think I would add the avocado slices as garnish to the servings rather than incorporating in the salad. Why?
Well, avocados tend to turn brown, and if you have leftovers, then you’ll have the ‘browning’ avocado. So, just slice or dice that avocado. Spritz with fresh lemon juice, and they’ll be vibrantly colorful for serving.
Grilled Corn Salad
You also can choose to grill the corn rather than steam or cook on the stove top in water.
Grilling is just another technique to add some flair to the looks of the salad. The taste may be a tad bit different, too, with the smokiness of the grilling. I’ve done this salad so many times, and have done it grilled, too.
Corn Salad Side Dish
While this can be a main dish, it’s also the perfect side dish.
If I’m serving this as a main dish, I’ll add a piece of grilled chicken or maybe grilled shrimp.
And, don’t forget that this recipe will be absolutely purrrrrrrrrrfect for you holiday table!
Easy Corn Salad Recipe
There’s virtually no cooking to this recipe. So, that makes it perfect for the Summer.
Of course, you have to cook the corn, but is that really ‘cooking’. I consider it more of ‘preparation’! It’s all in the semantics!

The Best Healthy Fresh Corn Salad
Ingredients
- 3 ears fresh corn, cooked, cut from cob
- 8 mini peppers, thin slice rounds with seeds
- 1 zucchini, medium size, cut into bite size pieces
- 1 ½ cups cherry heirloom tomatoes, sliced in halves
- ½ bell pepper, medium dice
- 4 green onions, sliced with some of the greens
- 1 ½ cups fresh mozzarella, cut into bite size pieces, or use mozzarella balls sliced in halves, other options are: gorgonzola, blue cheese, feta cheese, goat cheese, crumbled
- 1 cup fresh basil leaves, rough chop
- ½ cup fresh flat parsley, rough chop
- 1 lemon, juice
- 1 lime, juice
- ¼ cup extra virgin olive oil
- Salt and Pepper to taste
Instructions
Combine the corn, peppers, zucchini, tomatoes, bell pepper, green onions, mozzarella, basil, and parsley in a large bowl. Give a quick toss and blend of ingredients.
Squeeze on the lemon and lime juice. Drizzle on the olive oil. Add salt and pepper to taste.
Toss and blend. Serve immediately or refrigerate (covered with plastic wrap) until ready to serve.
