The fact that it’s only a few ingredients. Extra Virgin Olive Oil, Seasoning Mixture, Tomatoes, Potatoes, Olive Mixture. 

How to Season Mediterranean Chicken

While I’m suggestisng Italian seasoning mixture, you could also use a Greek seasoning mixture. Or if you more of a Middle Eastern flair, try my homemade Harissa!

This recipe also uses an olive mixture. You can get something at a grocery store deli, or make  your own! It’s so easy. Make a batch and use for charcuteries and more! Here’s the recipe. Trust me, you’ll be saving serious money!

Mediterranean Chicken

Yield: Serves 4

Ingredients

  • 1/3 cup extra virgin olive oil, divided
  • 5 cups leeks, thinly sliced
  • 2 Tbl. Italian Seasoning, can substitute Greek Seasoning
  • 1 tsp. salt
  • Whole San Marzano Tomatoes, 28 oz., put in bowl and mash tomatoes
  • 2 lb. chicken breasts, boneless skinless, thin cut
  • 3 large Yukon pototoes, cut lengthwise in halves and then slice each half in 6-8 pieces
  • 1 cup olive mix, can get at grocery deli OR check my Roasted Olives Recipe (See Notes)

Instructions

  1. Preheat oven to 375
  2. Pour halve of the olive oil in a large baking dish (with a lid). Add the leeks.
  3. Mix the Italian Seasoning and salt with the mashed tomatoes. Pour half over the leeks.
  4. Place the chicken breasts and potatoes on top. Sprinkle the olive mixture around. Top with the remaining tomato mixture. Put the lid on top.
  5. Bake in a preheated 375 oven for 65-70 minutes or until the chicken is cooked to 165 temperature.
  6. Remove and let the misture rest about 5 minutes. Serve!

  1. I always love seeing how Ally incorporates wholesome foods into her meals. I decided to make her Mediterranean Chicken and let me tell you, this is the bomb! It’s full of flavor and the olives are the star of this dish! A few simple ingredients and you have a meal that feeds your soul!
