I’ve created this recipe while staying in Tuscany. Ben and I have a small villa, so we did some meager grocery shopping. You know, just few things for snacks, breakfast and maybe a dinner in.   Well, here’s what was created with just a few ingredients, and I’m telling you, it’s wicked good!  In fact, Ben said it out strips the Michelin restaurant we ate in for lunch!

This particular recipe is almost like a caprese salad, but it’s caprese chicken. Well, caprese chicken minus the mozzarella. If you want a caprese chicken, then here’s one I created and it’s as simple as this recipe. 

Grilled Balsamic Chicken

You’re going to grill your chicken in both olive oil and balsamic vinegar. 

Balsamic is much different from a regular vinegar be it apple cider or wine vinegar. Darker, sweeter and thicker, the preparation of it creates the thickness. Balsamic comes in many flavors and varieties. It’s a deep brown and made from unfermented grape juice. The flavors are much more complex and bold. And, the tartness is evident. Expensive balsamic is aged in barrels sometimes for years! And, it can be mighty pricey! 

Sun Dried Tomatoes Recipes

I’ve somewhat reconstituted or rehydrated the sun dried tomatoes in this recipe by putting them in the skillet after cooking the chicken. This tenderizes the dried tomatoes and brings out more of the flavors. They’re full of nutrients and antioxidants. Sometimes they’re packed in oil.

Yield: 2 hungry people

Ingredients

  • 2 large chicken breasts
  • 1/4 cup extra virgin olive oil, divided
  • Sea Salt, to taste
  • Coarse Ground Pepper, to taste
  • 1/2 cup sliced sun dried tomatoes in oil
  • 2 tsp. Balsamic vinegar, divided
  • 1 cup fresh arugula

Instructions

Over medium high heat in a grill pan, pour half the olive oil and one teaspoon of balsamic. Salt and pepper the chicken breasts well on both sides. Put in the hot oil and sear on each side about 3 minutes to each to get a golden brown and markings.

Reduce heat to medium low and continue cooking about five minutes per side. When done (165 temperature), remove to a plate. Let rest.

Deglaze the skillet with about 1/4 cup of water. Increase heat to medium high and add sun dried tomatoes with oil. Stir and cook about 7 minutes.

Slice the chicken at an angle. Drizzle with remaining olive oil. Cover with sun-dried tomatoes, remaining balsamic vinegar and au jus from skillet. Serve immediately.

  1. Miss Ally, this sounded so good, I made it for lunch just now (“boho’d” it into an entree by deglazing the pan with chicken stock and making risotto & tomatoes.) Those random drops of balsamic took it over the top! Your hubby wasn’t exaggerating. 🙂
