One Skillet Greek Chicken

Yield: Feeds 4

Ingredients

  • 1 cup olives, kalamata and green with pimentos
  • 1 1/2 Tbl. oregano
  • 1 Tbl. garlic granuales
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 cup feta, crumbled
  • 1 box (16 oz.) Kettle and Fire Chicken Bone Broth
  • 1/4 cup extra virgin olive oil
  • 1 1/2 to 2 lbs. chicken breasts, boneless skinless, can use thighs
  • 4 cups fresh tomatoes, Roma or San Marzano cut in halves
  • 1 large sweet onion, French cut
  • 3 large Yukon potatoes, washed and sliced lentghwise in halves

Instructions

  1. Preheat oven to 400
  2. In a 4 cup measuring cup, add the olives, spices, feta cheese and chicken broth. Blend well. Set aside.
  3. In a large baking dish (with lid), drizzle the olive oil. Add the tomatoes, onions and potatoes. Put the chicken on top. Pour over these ingredients seasoning mixture of bone broth.
  4. Cover and bake for 75 to 85 minutes in a preheated 400 oven. Remove and let cool somewhat before serving.
