Italian Olive Oil Cookies
Ingredients
- 1 cup organic sugar
- 1/2 cup extra virgin olive oil
- 1/4 tsp. salt
- 2 1/2 cups flour, self rising, divided + more for surface area to make cookies
- 1/2 cup appl cider
Instructions
- Preheat the oven to 350.
- Line the cookie sheet with parchment paper.
- In a large mixing bowl, add the sugar, olive oil and salt. Blend together well about 5 minutes.
- Add 1 1/2 cups of flour and work into the mixture. It will be thick. Add the apple cider and blend into the mixture. It will be more loose. Add the remaining flour and work into the mixture.
- Use your hands to work the dough in the bowl blending and kind of 'kneading' it for about five minutes.
- Coat your surface with about 1/2 cup of flour and spread it out. Take one-third of the dough and work it in your hands. The stickiness should be gone. Start gently rolling into a long 'snake' shape (about 18-24"). Cut in half. Lay the two 'snakes' side by side. Cut these two pieces into 3-5 smaller pices.
- Take these pieces, each about 2.5-4" in length (like a snake) and coil it into a circle, like a 'rose'. Place on the cookie sheet. Continue until all the dough is completed. Let the rolled cookie shapes sit for about 15 minutes before baking. This will allow some rise from the self-rising flour.
- Bake in a preheated 350 oven about 15-18 minutes. Remove and let cool.
