Individual Peach Pie
If you want an individual peach pie that’s super easy to make and will be a hit with all, then dive into this recipe. It will not disappoint!
Individual Peach Phyllo Ramekins
Ingredients
- 16 oz. frozen peaches
- 1/2 cup coconut sugar, divided
- 3 Tbl. arrowroot flour
- 3 Tbl. lemon juice
- 6-8 Tbl. butter, cut in cubes
- Package of Phyllo dough, using probably one sleeve
Instructions
- Preheat oven to 375
- Put the peaches in a medium mixing bowl. Toss with the arrowroot flour, lemon juice and 1/3 cup of the coconut sugar. Set aside.
- Grease each ramekin well, then put a couple pats of butter and about 1/2 tsp. coconut sugar in each.
- Take 2 sheets of phyllo dough and ball/wad up. Press into the bottom of the ramekin. Do that for all ramekins.
- Put equal amounts of the peaches in each ramekin. Press down into the dough on the bottom.
- Take a couple of sheets of phyllo dough for each ramekin. Ball/wad up and place on TOP of the peaches. Push and press into the peaches and tuck into the ramekin as best you can. Put a pat or two of butter on top.
- Put the ramekins on a cookie sheet. Bake in a preheated 375 oven about 28 to 32 minutes or until the peaches are somewhat bubbly and the dough is golden brown.
- Remove and serve!
