Unlike my Great Gatsby Waldorf Salad which is blue cheese based, this Asian apple salad is fresh light and has an array of flavors and textures! And, there’s gorgonzola!
Apple Salad Recipe
An apple salad recipe can be made with most any variety apple. But, for me, my favorites to use are:
- Granny Smith
- Pink Lady
- Fuji
- Honeycrisp
- Pink Lady
- Cosmic Crisp

Granny Smith Apple Salad Dressing
With this salad, I didn’t want a salad dressing that would compete with nor overwhelm the natural flavors of the tart Granny Smith apple bites and the subtle baby bokchoy. I wanted you to taste both with each bite. And, it all comes together with a simple Asian-inspired vinagrette!

Asian Apple Salad
The dressing really makes this salad take on more Asian flavors! Toasted sesame oil, rice vinegar and black sesame seeds. Simple yet so decadent!
Healthy Green Apple Salad
Ingredients
- SALAD:
- 1 large Granny Smith Apple, washed, cored and thinly sliced into bite size pieces
- 1/2 lemon, juice only
- 1/3 cup dates, small dice
- 3 Tbl. fresh mint, chopped
- 4 cups baby bok choy, can substitute arugula, baby spinach
- 1/3 cup gorgonzola crumbles
- 1/2 cup sliced almonds
- DRESSING:
- 3 garlic cloves, finely minced
- 4 Tbl. toasted sesame oil
- 3 Tbl. black sesame seeds
- 3 Tbl. rice vinegar
- Salt and Pepper to taste
Instructions
- In a large mixing bowl, combine the apple slices and lemon juice. Toss well. Add the dates and mint and toss and blend.
- Add the boychoy and gorgonzola. Toss together.
- In a small bowl whisk together the garlic, sesame oil, sesame seeds, rice vinegar, salt and pepper.
- Pour on the salad. Toss and blend well. Sprinkle the sliced almonds on top.
- Serve immediately.

What can I substitute for the Gorgonzola ?

Hi, Beatriz, you’ll find gorgonzola in the cheese department. It’s kind of like blue cheese. You can buy in a piece and crumble yourself or buy pre-crumbled. I prefer to crumble myself. It’s just more fresh! Hope this helps! It’s a lovely salad! xoxx ally
