French Almond Cake

Ever had almond cake? Well, if not, you’re in for a treat! It’s like a three littl’ bears cake. It’s ‘jusssst right’ once you bite into it! Easy recipe!

This almond cake is quite moist and fresh tasting. And, it really is better on day two after it sits and just comes together after baking. Perfect for breakfast, it also can be that cake you serve, maybe just a sliver, with some chilled Greek yogurt and a drizzle of pure honey. Fresh fruit always goes with almond cake as does a dollop of whipped cream.

Yes, this is an easy almond cake recipe because you’re going to use a cake mix as your base to build the cake. Sometimes we need easy given how hectic our lives can become. So why not have your cake and eat it, too. An easy almond cake recipe in not time at all and not making you a slave to your kitchen.

Easy Cake Mix Recipes

Now, while I love making cakes from total scratch, sometimes I just have to have shortcuts. And, a cake mix is the way to go! This french vanilla almond cake is nothing like the cake mix. You’re going to gussy it up with pineapple juice and cream cheese. Now, that might just make it over the top for easy cakes!

Springform Pans for Cakes

Now, I baked this almond cake in a springform pan, but you certainly could bake it in a bundt pan or in regular square, rectangle or round baking pans. Just adjust your baking time for the type of pan you’re using.

Here’s another springform pan ‘cake’ I make, totally from scratch! It even won me a spot on Hallmark Channel’s ‘Home & Family TV’ ‘Best Home Cooks’. You won’t be disappointed!

Yield: Makes: One 11-12” springform cake

Ever had almond cake? Well, if not, you're in for a treat! It's like a three littl' bears cake. It's 'jusssst right' once you bite into it! Easy recipe!

Ingredients

  • Preheat oven to 350
  • 2 cups almonds, roughly crushed in food processor, set aside, divided
  • 1 (16.5 oz.) cake mix, French Vanilla Duncan Hines or can substitute white or yellow
  • 1 (3.5 oz.) instant vanilla pudding & pie mix
  • 1 ½ cups pineapple juice
  • 1/3 cup oil
  • 3 eggs, beaten
  • 1 Tbl. Vanilla extract
  • 8 oz. whipped cream cheese, room temperature

Instructions

Put the cake mix and vanilla pudding mix in a large mixing bowl. Blend together.

In a large measuring cup (at least 2 cups), whisk together the pineapple juice, oil, eggs and vanilla extract.

Pour into the dry ingredients. Blend well with a hand mixer working out all lumps. Add the whipped cream cheese and blend into a thick creamy mixture. Fold in one and one-half cups of the almonds.

Grease well the springform pan. Cut out a piece of parchment paper to line the bottom of the pan.

Pour the cake batter in. Sprinkle the remaining crushed almonds on top and gently pat into the batter (but not all the way in).

Bake in a preheated 350 oven for 41 to 44 minutes.

Remove to a cooling rack for about 30+ minutes. Release the cake from the pan. Let it cool and rest until ready to serve.
