The heart of the dish is oatmeal which provides fiber and a comforting texture.

Natural sweetness comes from the bananas, apples, dates and/or raisins. 

There’s no added sugar in this recipe. And, we know that sugar isn’t our friend! 

Oatmeal Cake

The nuts definitely add a crunchy contrast to the soft oatmeal.

And, the shredded unsweetened coconut brings a hint of tropical flavor and extra crispiness.

Another important thing to remember. Buy the BEST oatmeal you can.

Crumbly Coffee Cake

Crumbly Coffee Cake

Yield: One approximate 9x11 baking dish

Ingredients

  • 1/4 cup lemon juice
  • 1 cup apples, skin on, crispy apple, small dice
  • 1 banana, mashed
  • 3/4 cup almond flour
  • 2 cups whole oats
  • 1 cup nuts, walnuts and/or almonds chopped/sliced
  • 1 cup coconut, unsweetened
  • 1 cup raisins and/or dates, diced
  • 2 egg whites, you can use the whole egg if you wish
  • 5 Tbl. butter, melted
  • 1/2 cup Kettle & Fire chicken broth
  • GANACHE
  • 2/3 cup 70%+ cacao chocolate, chips and pieces
  • 1/3 cup coconut milk

Instructions

  1. Preheat oven to 350
  2. Grease a baking dish then line with parchment paper allowing the sides to overlap (so you can pull out the whole cake from the dish when cooled).
  3. In a large mixing bowl add the mashed banana, apples (tossed in lemon juice) and blend.
  4. Add the egg whites, melted butter and blend. Add the almond flour, oats, coconut, raisins/dates and blend.
  5. Add the chicken bone broth and blend well.
  6. Pour into the baking dish. Pat down securely with your hand or the bottom of a measuring cup. You want the batter compacted into the dish.
  7. Bake in a preheated 350 oven about 50 to 55 minutes.
  8. Remove and cool.
  9. GANACHE: Combine the chocolate pieces and coconut milk in a 2 cup microwavable measuring cup. Microwave 45 seconds, remove and stir. Microwave another 30 to 45 seconds. Remove and blend into a creamy chocolate mixture. Drizzle on a COOLED coffee cake.

Notes

Let the cake cool before drizzling on the ganache.

The cake will have a crumble to it. That's ok!
