Recipe Moroccan Salad

Ingredients:

  • Mixed olives (green, Kalamata, black)

  • Capers

  • Roasted red peppers (sliced)

  • Mild banana pepper rings

  • Extra-virgin olive oil

  • Fresh Lemon Juice
  • Harissa (as seasoning paste or powder)

Steps:

  1. Combine the olives, capers, roasted red peppers, and banana peppers in a bowl.

  2. Drizzle with extra-virgin olive oil and lemon juice.

  3. Add harissa to taste (start small—it’s spicy!).

  4. Toss until well coated and let marinate at least 30 minutes for flavors to meld.

Best Moroccan Olive Salad

Yield: Makes about 24+ oz. of olive medley

Ingredients

  • 2 1/2 cups kalamata olives, pitted
  • 2 1/2 cups green olives, with pimentos
  • 1 cup roasted red pepper strips
  • 1/2 cup capers, drained
  • 1 cup mild banana pepper rings
  • 1/4 cup dry harissa
  • 1/3 cup extra virgin olive oil
  • 2 lemons, juice only
  • OPTIONAL: You can add other ingredients that you might like! For instance, chickpeas

Instructions

  1. Put the olives, red pepper strips, capers, and banana pepper rings in a bowl.
  2. Sprinkle on the harissa. Drizzle the olive oil and add the lemon juice.
  3. Toss and blend well. Ready to serve!

Notes

This olive salad is so versatile. You can add other ingredients per your liking:

Fresh chopped herbs.

Garbanzo Beans

Ingredients like pickled cauliflower, beans, etc.
