Ingredients

  • CABBAGE SLAW:
  • 8 to 10 cups cabbage, shredded
  • 2 cup green pepper, small dice
  • 1 cup sweet onions, small dice
  • 1 Tbl. caraway seeds
  • 2 tsp. salt
  • 1 tsp. pepper
  • BRINE:
  • 3 cups filtered water
  • 1 1/2 cups apple cider vinegar with mother
  • 2 Tbl. honey
  • 2 tsp. salt

Instructions

  1. Put all the ingredients for the brine in a saucepan over medium heat and simmer boil about 8-10 minutes. Turn off heat and let it cool.
  2. In a very large mixing bowl, combine ALL the ingredients. Mix and blend with your hands. Then for about 6 to 10 minutes massage the cabbage ingredients with your hands. It will become softer and wilt. It will produce water (from the cabbage). The raw cabbage mixture will reduce somewhat in size..
  3. Have several clean sterilized glass jars with lids (or glass containers with lids). Put equal amounts of the cabbage mixture in each.
  4. Pour equal amounts of the brine over the cabbage in the jars. Press down the cabbage mixture in the jar so that the brine covers the mixture. Put on the lid. Refrigerate.
