Whip up these herb potatoes for a healthy option using nutrient-rich ingredients and fresh herbs for amazing flavor.
Roasted Herb Potatoes
These herb potatoes are simple easy and require few cooking skills!
They’re also healthy!
Made with simple, whole foods: potatoes, fresh herbs, olive oil, and peppers and onion, pull out your cast iron skillet for magic.
Remember that whole foods, like this recipe, offer better nutrition and fewer additives than processed alternatives.
Skillet Potatoes and Onions
You can certainly use garlic in this recipe, but I decided that the herbs would be the power flavor ingredient.
Fresh herbs like rosemary, thyme, parsley, dill, and basil are rich in antioxidants, vitamins, and anti-inflammatory compounds. They enhance flavor without needing excess salt or butter.
Skillet Baby Potatoes
Now, I’m using baby Yukon potatoes because they’re just so tender and creamy. These herb potatoes are scrumptious and it’s ok to say yes to potatoes!
Potatoes (especially with the skin on) are a good source of:

Hopefully, you have a well seasoned cast iron skillet. You can cook and serve in this skillet. Why use a cast iron skillet?
Sautéing in a skillet (vs boiling or deep-frying) helps:

Herbed Potato Salad
Another way that you can use this recipe is to make a potato salad!
If I were doing that, I’d slice all the potatoes (well, maybe not the tiny marble sized potatoes) in halves. Then after they’ve cooked using the recipe, let them cool completely.
From that point, toss the skillet herb potatoes with some avocado mayonaise, sliced crispy celery and maybe some capers. A splash of lemon juice will add a nice citrus hint! Refrigerate before serving and devour!

Chop and reheat the potatoes in a skillet with:

Skillet Herb Potatoes
Ingredients
- 24 oz. baby potatoes, washed well, larger potatoes sliced in halves
- 1/4 cup avocado oil
- 1 cup sweet onions, diced
- 1 cup green pepper, diced
- 1/2 cup fresh herbs, chives, basil, tarragon, rosemary, Italian parsley, finely chopped
- Salt and Pepper to taste
Instructions
- Heat a large (10"+) cast iron skillet on medium high heat. Pour in the avocado oil and let it heat.
- Add the potatoes. Careful with the splatter. Cover with a lid and let the potatoes cook on medium high for about 12 minutes turning several times.
- Reduce heat to medium. Cover and cook another about 4-5 minutes. Add the onions and peppers. Cover and cook another about 5 minutes.
- Check the largest potatoes for tenderness using a wooden skewer. If more cooking is needed, reduce heat to medium low, cover and cook until tender.
- When potatoes are tender, turn off heat. Add the fresh herbs and toss and blend. Cover with the lid and let the fresh herbs steep about 3-5 minutes.
- Serve immediately!
