Grandma's Homemade Vegetable Soup

Yield: Serves 8+

Ingredients

  • 1/3 cup extra virgin olive oil
  • 1 sweet onion, medium dice
  • 4 cloves garlic, sliced
  • 1 lb. ground beef
  • 1 lb. ground pork
  • 1 can (28 oz.) chopped tomatoes
  • 1 Tbl. Italian Seasoning
  • 1/4 cup nutritional yeast
  • 8 oz. sour cream, dairy free, almond and coconut
  • 6 cups vegetables, your choice, medium dice
  • 2 cups celery, with leaves, sliced
  • 2 boxes (16 oz.) Kettle and Fire beef bone broth
  • 1 cup fresh Italian parsley, roughly chopped
  • Salt and Pepper to taste

Instructions

  1. In a large soup pot or Dutch oven over medium heat, put the olive oil, onions and garlic. Add one-half cup of water and let the onions and garlic cook until somewhat tender.
  2. Add the beef and pork and brown. Add the tomatoes, Italian seasoning, nutritional yeast and sour cream and blend well. Cover and let this cook about 20 minutes over medium heat stirring occassionally.
  3. Add the vegetables, celery, beef bone broth, blend, cover and cook another about 30 to 45 minutes over medium heat.
  4. When ready to serve add the parsley and blend into the soup. Add salt and pepper to taste.
