Ok, ok, I know this isn’t technically an ‘omelette’ but it could be IF you wanted to prepare it stovetop.
You’d need a larger skillet, and you could then easily flip one side and make it a goat cheese omelette.
But, if you want to put it in the oven, then you’ve got a fabulous goat cheese frittata!

So what’s goat cheese?
Very simply, goat cheese is any cheese made from the milk of goats.
Goat milk has slightly less lactose than cow’s milk, so it can be easier to digest for those who are lactose issues. But that’s not the real benefit of goat cheese. Goat’s milk is homogenized naturally, which makes it easier for humans to digest.
Goat cheese is one of the world’s oldest cheese, and whether you get it hard or soft, just know that it’s been around for almost eleven thousand years!
Goat Cheese and Egg Recipes
Does goat cheese have some great health benefits? Well, according to Web MD:
“The vitamins, minerals, and heart-healthy fats in goat cheese improve health in a number of ways. Copper, for example, helps produce red blood cells, which carry oxygen from the lungs to the other tissues of the body. Copper also aids in the absorption of iron and other nutrients.
Goat cheese also contains riboflavin, also known as vitamin B2. Riboflavin plays an important role in many bodily processes, especially the production and functioning of new cells.”
Now I love goat cheese and using it with eggs as in this recipe makes this creamy mixture with a slightly tangy bite in each bite!

Vegetarian Recipes with Goat Cheese
Now if you want to make this recipe pure vegetarian, then I suggest you look for a goat cheese labeled as ‘vegetarian’. It’s out there, so just Google and find it!
Goat Cheese Frittata
Ingredients
- 5 pasture raised eggs, whisked together
- 3 Tbl. extra virgin olive oil
- 2 cups sweet onions, French slice
- 1/2 cup goat cheese
- 2 Tbl. fresh dill, chopped, divided
- Salt and Pepper to taste
Instructions
- Preheat oven to 375,
- In a medium sized {oven suitable} skillet (about 8") over medium heat put the olive oil. Add the onions and saute for about 3-5 minutes until tender and aromatic.
- Remove from the blaze. Sprinkle on half of the dill. Drizzle on the egg mixture.
- Dollop on the goat cheese all around. Sprinkle the remaining fresh dill on top.
- Bake in a preheated 375 oven for about 23 to 27 minutes.
- Remove and use a rubber spatula to go around the skillet perimeter to loosen. Then use the spatula to cut in half and then in fourths. Ready to serve!
Notes
You can add fresh spinach if you like. Saute quickly with the onions.
