Breakfast Toast
For me, breakfast is synonymous with toast.
And, the best toast, I think, is a buttered and toasted under the oven broiler toast.
Of course, we have a toaster, but when I really want toast from my childhood, I’ll do it in the oven.
Avocado Breakfast Toast
One of the most popular toasts is avocado toast.
Gosh, it’s so easy to do. And, if you go just one teeeesy step further and ‘char’ the avocado. OMG! Talk about flavor!

Healthy Breakfast Toast
Now this recipe is certainly a healthy breakfast!
We’re going to slather with ricotta cheese seasoned with finely minced garlic. Sometimes for sake of convenience, I’ll buy the prepared minced garlic which makes it super easy.
Breakfast Toast Sandwich
The creaminess of the garlic ricotta is then spread on the toast. I love using sourdough bread slices. One of the best sour dough breads? I find it at Aldis! Yes, it’s perfect for this recipe.
And, topping the ricotta will be arugula or you could do spinach and tomatoes.

Breakfast Toast with Egg
Finally, on top this aaahhhhhhmaing toast, which in and of itself is divine, you’re going to put an egg. For me, it’s gotta be sunnyside with a runny yolk. I could also see a soft boiled egg with it. Again, the yolk soft!
And, if you’re hankering for scrambles, then you could actually top with a scoop of my French scrambles. Oh, yum for sure!

Easy Breakfast Toast
Ingredients
- 6 slices sourdough bread
- 1 cup ricotta
- 1 Tbl. minced garlic
- 2 cups cherry tomatoes, sliced in halves
- 3 Tbl. extra virgin olive oil
- 1/2 fresh lemon, juice only
- 2 cups fresh arugula
- 6 pasture-raised eggs, cooked sunnyside or to liking
- Salt and Pepper to taste
Instructions
- In a small bowl, blend together the ricotta and minced garlic. Have the tomatoes sliced and arugla prepared.
- Put the bread on a large cookie sheet, turn the oven to broil (place bread about 10-12' from broiler). Toast to a golden brown.
- Have the eggs prepared sunnyside (or to your liking). I usually do 4 to 6 in a nonstick crepe pan.
- Build your ricotta breakfast toast. Place the arugula atop the ricotta on the toast, then the tomatoes. Give an drizzle of EVOO and squeeze of lemon juice. Then place the egg on top. Serve immediately.
- As always, salt and pepper to your taste.
Notes
If you bread slices are large, after toasting slice them diagonally in halves. Or leave big. It's totally up to you.
