Pork never tasted so good! Like a spectacular explosion of enchanting flavors~~spicy Cajun seasoning, sweet juice grapes, caramelized apple slices and hints of mint~~you’ll licking your chops with this dish!
Pork, the other white meat, juicy tender and perfect for breakfast, lunch, brunch or dinner~~truly, this plate will make you smile.
What you need:
4-5 pork chop filets, boneless (about 1 to 1 ¼” thick)
3 tsp. Cajun seasoning
½ tsp. sea salt
½ tsp. coarse ground pepper
5 Tbsp. butter, melted
1 large apple, crisp, skin on, washed & cut into 4-5 rounds (one for each chop)
2 Tbsp. brown sugar
¼ cup water
2 Tbsp. mint, chopped or thinly sliced
½ cup red grapes, sliced in halves (you may want more, so have at it)
Coat a cast iron skillet with cooking spray and turn heat to medium high. Let it get hot. Put the chops in and pan sear on each side about 2 minutes/per side to a golden brown. Reduce heat to low. Drizzle about half of the butter on the chops then put one apple slice on each chop, drizzle the remaining butter on the apple slices, sprinkle on the brown sugar atop the apple slices. Cover with a lid and let the chops steam about 5-7 minutes.
Turn oven broiler on. Put the skillet about 8-10 inches from the boiler and boil about 7-8 minutes or until the apples start to brown around the edges and curl. Remove, add the water to the skillet and gently deglaze. Add the mint and grapes, cover with the lid and let the chops rest about 10 minutes. Ready to serve!
