Easy Pork BBQ Recipe

OK, I’ve been to a lot of BBQ competitions. I know that die hard BBQ gurus are dedicated to their craft. But, what if you’re not a BBQ guru, and you want to do BBQ. Well, this easy pork BBQ recipe is for you!
Apricot Pork Tenderloin
Nothing tastier and more tender than a pork tenderloin. And, when you add those sweet apricot flavors to it, well, you’ve got one fancy apricot pork tenderloin. And, I’m not talking slices of tenderloin, I’m talking shredding that pork tenderloin and creating your fancy BBQ meat for things like sliders, buns, and more.
Apricot Glaze for Pork
I’ve used a lot of fruits with my pork, but my favorites are pineapple, peach and apricot. This apricot glaze for pork is a thick rich sauce that just brings together all the flavors in this oven cooked pork. Hey, there are lots of times that I want pork BBQ but I don’t want to haul out the live fire or turn on the gas grill, so the next best thing for me to do is do pork BBQ in the oven.
Pork BBQ in Oven
Pork BBQ in the oven is the easy way to enjoy your BBQ without all the work. If you want a smokey taste or smokey aroma and flavor, then it’s simple. Just add two teaspoons of smoked paprika to the recipe. Or you can add a couple of teaspoons of liquid smoke. Your oven does all the work. Just make sure you have a heavy pot, like a Dutch oven, and it’s securely covered. Then you want to ensure you have enough liquid in it as it’s cooking, so a few times, you’re going to need to open that oven, lift that lid and check for liquid. You don’t want your pork burning! Ingredients
- Preheat oven 375
- 3 lb. pork tenderloin
- 1 small onion
- 1 rib celery with leaves
- 1 large carrot
- 4 peeled garlic cloves
- 1/3 cup coconut oil
- 3 cups chicken broth + additional water as needed
- 1 Tbl. fresh grated ginger
- 2 tsp. sea salt
- 2 tsp. coarse ground pepper
- SAUCE Recipe: Apricot Mustard Spicy Sauce
Instructions
Coat all sides of the pork tenderloin with salt and pepper. Cut the tenderloin into 3-4 large chunks. Set aside.
Put onion, celery, carrot and garlic in a food processor and pulse until well ground.
In a heavy cast iron pot (with lid), heat oil over medium high. Add pork chunks and brown on all sides. Remove the pork to a plate. Add ground veggies/garlic and sauté about 5 minutes. Add pork back in and blend. Add ginger and blend.
Put a doubled layer of foil over pot then cover tightly with lid. Put in preheated 375 oven for about 1 ½ to 2 hours. Check occasionally and add a little water as needed. Reduce heat after 2 hours to 325, add water if needed, and cook another hour. Pork should be fork-tender and tear apart easily. Remove from oven. Let rest covered.
Tear apart with a fork and add the ‘Apricot Mustard Spicy Sauce.’
