Quick Lentil Soup
Ingredients
- 1/3 cup extra virgin olive oil
- 2 cup carrots, small dice
- 1 can (14 oz.) tomatoes (chopped) + 1/2 cup water (rinse out can)
- 1 1/2 (16 oz.) boxes Kettle and Fire Beef Bone Broth + 1/2 cup water to rinse out box
- 2 tsp. garlic powder
- 2 tsp. onion powder
- 1 tsp. salt
- 1 1/2 cups lentils
- 1 cup cooked brown and wild rice
- 3-4 cups fresh baby spinach
Instructions
- In a large deep cast iron skillet (or medium sized soup pot) over medium high heat put the olive oil and carrots. Saute about 5-7 minutes to tenderize.
- Add the tomatoes, bone broth, water, spices, lentils and blend. Reduce heat to medium, cover and cook about 20-25 minutes minutes stirring occasionally. Check to see if the lentils are tender, if not, continue to slow/low cook until tender.
- Add the wild rice and blend. Add the spinach and using tongs submerge into the lentil soup. Turn heat to low, cover and let the spinach wilt and the rice warm.
- Ready to serve!
