These oatmeal almond cookies are like a baby granola crunchy bar. 

Loaded with nutty butter flavor, whole organic oats, pasture-raised eggs, almonds and FlavCity’s Butter Coffee Protein Smoothie, you’re eating something that’s likely not to be found in any bakery, grocery store, or most anywhere.

Oatmeal Almond Cookies

In these cookies, you can use whole almonds ground roughly in a food processor, or you can use sliced almonds. Your choice. I really prefer the sliced for convenience sake, but I have had to pull out the food processor, the baby one, on occasion to chop whole almonds. 

Simple Oatmeal Cookies

This oatmeal batter can be scooped or you can form the cookies by hand.

Roll into balls, like a meatball. Then flatten somewhat. Each cookie, like us humans, is unique. And, try sea salt flakes on top. Sure does add that pop of flavor.

Oatmeal Almond Cookies

Yield: About 18 cookies

Ingredients

  • 1 cup nut butter, peanut, cashew, almond, etc.
  • 2 eggs
  • 1 1/2 cup whole organic oats
  • 1 cup almonds, sliced
  • 1 scoop FlavCity Butter Coffee Protein Smoothie

Instructions

  1. Preheat oven to 350.
  2. In a medium mixing bowl combine the nutter butter and eggs and blend well.
  3. Add the oats and almonds and mix well.
  4. Add the protein smoothie and mix well.
  5. Scoop into cookies on a parchment paper lined cookie sheet.
  6. Bake in a preheated 350 for 14 to 18 minutes.
  7. Remove. Cool. Eat!

    1. Hi, Alison, the protein supplement adds 25 grams of protein and 10 grams of collagen plus it’s the main ‘sweetener’. You’d need to add some coconut sugar to sweeten a tad (not a lot, maybe 1/4 cup). Let’s see how it turns out for you! Promise to let me know! xoxx ally
