I think it’s cool how you can ‘see’ them, but someone eating the dish may not even know they’re having their morning meal ‘Popeye’d’ {my version of even more nutritious} with lentils! Seeing this sprinkling of the lentils, makes you sit in amazement that you’re eating them in a museli and enjoying them even more than you usually do.

Yield: About 4-6 folks

Ingredients

  • ½ cup lentils, black, pulse in food processor for about 3-4 minutes to chop/mince (you'll have 'dusty' mixture of ground 'lentils')
  • 1 cup hot water (110-120 degrees—microwave on high for about 80 seconds)
  • 3 Tb. brown sugar
  • ½ tsp. cinnamon, ground
  • 1 tsp. vanilla
  • 1/8 tsp sea salt
  • 1 cup milk, whole
  • 1 cup oats, whole
  • ½ cup walnuts, chopped
  • ½ cup, dried cranberries
  • 1 ½ cups cream, can use half and half or other types of nut milks like almond, coconut, etc.
  • 6 tsp. honey
  • 3 tsp. fresh thyme leaves

Instructions

  1. Put the lentils that have been chopped/minced (this will be a grainy like mixture) in a 2-cup glass measuring cup. Pour the hot water on the lentils. Cover and let them sit for about 15-20 minutes, absorb the water and ‘cooking and softening’.
  2. Put the brown sugar, cinnamon, vanilla, salt, milk, and oats in a medium sized sauce pan over medium heat for about 15 minutes. Cover and stir occasionally. Add the lentil mixture and blend. Turn heat to medium low to low and cook another 15 minutes stirring occasionally.
  3. Add the walnuts and dried cranberries, blend, turn off heat, cover with a lid and steam for 5 minutes.
  4. To serve, put ¼ cup of cream in each bowl. Scoop in equal amounts of the lentil/museli into the center of the milk. Drizzle each with a teaspoon of honey and a sprinkle of fresh thyme. Ready to eat!
