One of my most favorite cakes? A coconut cake!
And, when I can make it more guilt free, then I’ll have a larger slice!
Just how do you make desserts like cake and cookies healthier? Just a few ideas:
- Use whole grain flours or GF flours like almond flour.
- Cut down on sugar. Or better, yet, use more natural sweeteners, like bananas, coconut sugar, maple sugar, honey, maple syrup.
- Use healthier fats like olive oil or coconut oil.
- Add protein like cottage cheese. Or in this recipe FlavCity Vanilla Cream Protein Smoothie Mix.

You’ve got wet and dry ingredients in this recpe. That makes this coconut cake pretty dang simple!

What makes this cake so moist?
Cottage cheese. And, the full fat coconut milk also helps with moistness.
If you want to use honey rather than coconut sugar, that’s also an option.
Healthy Coconut Cake
This coconut cake is packed with the best ingredients that are good for you.
Just take a look at the ingredients.
And, you’ve got 50 grams of protein from the FlavCity Vanilla Cream Smoothie Mix and 24 grams from the 4% fat small curd cottage cheese. Seven grams in the coconut milk. 2.5 grams in the bananas. Twelve grams in the two eggs.
That’s a whopping about 95 grams of protein in this coconut cake!
Gluten Free Cake
We’re keeping it gluten free with 1: to: 1 GF flour! You can certainly use regular flour. And, I do think almond flour would work. I’d avoid coconut flour because it just absorbs so much more liquid.

Healthy Coconut Cake
Ingredients
- WET INGREDIENTS
- 2 bananas, mashed
- 2 pasture-raised eggs
- 1/3 cup coconut oil
- 1 1/2 cup coconut milk, full fat
- 1 cup cottage cheese, 4% small curd
- DRY INGREDIENTS
- 2 scoops FlavCity Vanilla Cream Protein Smoothie Mix, see notes for buying!
- 1 cup GF 1:to:1 flour
- 1/2 cup coconut sugar
- 1 Tbl. baking powder
- 1/8 tsp. salt
- 1 cup UNsweetened shredded coconut + more for sprinkling on top
- CHOCOLATE GANACHE
- 3 oz. coconut milk
- 4 oz. 70%+ cacao chocolate, break into pieces
Instructions
- Preheat oven to 350
- In a large mixing bowl, combine the WET ingredients. Blend well.
- Add the DRY ingredients and incorporate well.
- Pour into a well greased baking dish. Top with more shredded coconut.
- Bake in a preheated 350 oven 53 to 62 minutes or until a 4-6" wooden skewer comes basically clean from the center.
- Remove to a cooling rack.
- CHOCOLATE GANACHE: In a small saucepan over medium heat put the coconut milk. Add the chocolate pieces. Whisk quickly as the chocolate melts. Remove from blaze when the chocolate is melted. To make the ganache thicker, add more chocolate pieces. To make ganache thinner, add a tad bit more coconut milk.
- Drizzle with chocolate ganache, OPTIONAL.

You may ask for a substitute for the FC Vanilla Cream smoothie protein mix. I'm not familiar with anything out there that can be adequately substituted and still retain the high protein count.
