Salads come in all types, shapes, ingredients and textures. Sometimes you might get locked into the thinking that a ‘salad’ has to be green leaves and something else.
But, my interpretation of a Fresh Tomato salad is that it can be just about anything, hot, cold, warm. And, it’s incumbent upon me to vary the salad to keep it interesting.
This sweet cherry tomato onion olive salad can serve as the base just as it is as a salad, or you can build on it making it even more divine!

Tomato Onion Salad Recipe
Red onions are full of antioxidants.
And, if you’re red onion is too pungent, try this. Soak the sliced onions in ice water for about 30 minutes. Or you can sprinkle them with an acid, like vinegar. In this recipe, we used a whole lemon, juice only, a perfect acid.
Both of these techniques can help get rid of the strong onion taste.
Cherry Tomato and Red Onion Salad
I could eat my weight in this salad. And, don’t be afraid to make it your own. Yes, your own designer salad.
What I’m sharing here is the foundation or base. Think of what you could add to extend it. Some type of cheese, goat, blue cheese, gorgonzola, feta. Cucumbers! Yes, they would be delicious. Green olives. The choices are endless.
Chickpea Red Onion Tomato Salad
Now how would we build on it? Well, let’s add some grilled garbanzo beans to it.
OMG, talk about another layer of textural love and flavor. Or we could throw in some steamed shelled shrimp. Holleee schmollleeee, now we’re talking even more of a healthy breezy meal.
A grilled boneless chicken breast on top. I mean as I’m talking to you, my mouth is watering.
Let’s go off the grid and add something like long beans, or green beans to it. I’m thinking I might just toss in some crumbled beautiful creamy Maytag blue cheese!

Here’s another fabulous feature of this salad. THE HERBS! Yes, you’re using a large portion of herbs. It’s going to make this salad similar to say a tabbouleh salad with tomatoes and onions. Or maybe a tomato salad similar to tabouleh!
Easy Red Onion Tomato Salad
Ingredients
- 4-5 cups of sliced cherry tomatoes
- 1 cup red onions, thinly sliced
- 1 cup fresh herbs, Italian parsley, curly parsley, basil, chopped/minced
- 1 cup kalamata olives
- 1/4 cup extra virgin olive oil
- 1 medium lemon, juice only
- Sea salt and pepper to taste
Instructions
- In a medium size mixing bowl, combine the tomatoes, onions, herbs and olives. Toss together.
- Drizzle on the olive oil. Squeeze the lemon juice. Add the salt and pepper. Toss and blend.
- Ready to serve!
