Changing up breakfast eggs can be a challenge. I love Euorpean style breakfasts and salads for breakfast are common. But, I do like my eggs with a good meat like bacon, sausage, pork, or beef. So how to get everything in a skillet breakfast recipe. This bacon dripping skillet steak eggs does it all.
Probably close to a perfect food~the egg. And, what is better with an egg than a nice cut of beef! And, it’s a given that eggs aren’t just for breakfast. In this case, the bacon dripping skillet steak & eggs makes a mighty fancy dinner dish. Just add some nice hot crusty artisan bread, and, wow, you’re in a place of goodliness.
Salads for Breakfast
Salads for breakfast are fabulous. In fact, it doesn’t matter if I’m just frying an egg, boiling an egg or scrambling an egg, I’m going to have some kind of green with it. The salads aren’t extravagant and not a lot of work. Maybe slicing some cucumbers, tomatoes and onions or throwing on a big handful of arugula with a few tomatoes. It’s all about getting my vegetables and greens in with just about all meals we’re eating.
Skillet Breakfast Recipes
What I love about this dish is that you can keep it warm on the stovetop without significantly affecting the yolk of the egg, IF you have the temperature on a very low simmer heat. It seem like the greens under and around the eggs insulate and act as a buffer for too intense of a heat that would overcook the egg(s). Another thing I love about it is the array of flavors with the salty olives and other ingredients you find at the deli counter’s salad bar to punctuate big flavor.
Finally, the creamy feta cheese just rounds out everything with the tomatoes and greens~and, you surely know that if you prefer another type green, go for it. The main thing you want is some ‘salad’ rounding out the steak and eggs. Now if you have a hankerin’ for salmon and eggs, well, here’s one of my favorite recipes!
No bacon drippings, no worries. Just use another oil. If the whites of the eggs are not quite done, you can place about 10” below the broiler and broil a couple of minutes. Watch carefully!
