  • 1 cup sweet Vidalia onions, French sliced—thinly sliced lengthwise
  • ½ cup fresh chopped dill
  • 1 cup jarred roasted red peppers, drained and cut into bite-size pieces
  • 1 cup pitted deli olive mixture, drained
  • Extra virgin olive oil, to taste
  • Fresh lemon juice, to taste
  • Salt and black pepper, to taste

Instructions

  1. Blanch the green beans in boiling water for 4 to 5 minutes, until tender with a little bite.
  2. Transfer to a colander to drain and cool. Cut into approximately 2-inch pieces.
  3. Combine the green beans, onions, dill, roasted red peppers, and olives in a large mixing bowl.
  4. Drizzle with extra virgin olive oil and fresh lemon juice. Toss well, taste, and season with salt and pepper.
