Protein Packed Banana Bread

Yield: One Large Loaf or Two Smaller Loaves

Ingredients

  • 4 very ripe bananas, mashed
  • 2 pasture raised eggs, whipped together
  • 1/3 cup coconut sugar
  • 10 oz. coconut milk
  • 1/3 cup coconut oil, liquid form not solid
  • 2 scoops FlavCity Vanilla Cream Protein Smoothie Mix
  • 2 cups flour, GF or regular flour
  • 1/2 tsp. salt
  • 2 Tbl. baking powder
  • 1 cup UNsweetened shredded coconut
  • 1 1/2 cup walnuts, rough chop

Instructions

  1. Preheat the oven to 350
  2. Grease well your baking pan. Add parchment paper letting it lap over the sides to use as 'handles' to remove the loaf of bread after it's baked and cooled.
  3. In a large mixing bowl, combine the bananas, eggs, coconut sugar, coconut milk, and coconut oil. Blend well.
  4. Add the flour salt and baking powder and blend into a thick mixture. Add in the coconut and walnuts.
  5. Bake for 55 to 65 minutes or until a 6" wooden skewer come basically clean from the center. The top of the bread will have cracks and crevices.
  6. Remove the bread to a cooling rack. Take a butter knife and carefully go around the perimeter of the baking pan to help release the bread.
