Now I’ve always been a huge fan of cucumbers in salads. And, I love to showcase just the cucumber as the main ingredient!

Mediterranean Cucumber Salad
Ingredients
- 1/3 cup extra virgin olive oil, divided
- 1 cup fresh basil leaves, packed
- 1 cup red onions, thinly sliced, French slice halves
- 1 1/2 cups cherry and/or San Marzano small tomatoes, sliced in halves
- 6 cups of baby cucumbers, washed, and sliced in bite size pieces
- 1 (16.5 oz.) can cannellini beans, rinsed and drained
- 1 large fresh lemon, juice only
- Salt and pepper to taste
Instructions
- I prefer to use a wooden boil. Drizzle a healthy splash of olive oil in the the around the bowl. Add the basil, onions, tomatoes, cucumbers and beans.
- Squeeze on the lemon juice. Salt and pepper to taste.
- Toss and blend well. Let the salad sit for about 15 to 20 minutes before serving.
Notes
This salad keeps well for several days.
Use the best baby cucumbers that you can find.
Don't use cucumbers with a waxy tough outer skin. IF you do, peel the cucumbers.
