Ingredients
- 2 chicken breasts, bone in, skin on, about 1.5 to 2lbs.
- 1/3 cup extra virgin olive oil, divided
- 1 cup roasted red peppers + 1/4 cup juice, store bought jarred peppers
- 1 cup pepperoncinis + 1/4 cup juice, can be whole or sliced
- 16 oz. Kettle and Fire Chicken Bone Broth + 1/2 cup water to rinse box
- 1 fresh herb bouquet bundle, tied with cooking twine, variety of stems, oregano, parsley, basil. thyme, tarragon, chives
- Salt and Pepper to taste
Instructions
- Preheat oven to 400
- In a Dutch oven put about half the olive oil, chicken. Salt and pepper to your taste. Add the peppers, pepperoncini, bone broth and herb bundle on top. Drizzle with remaining olive oil.
- Roast in a preheated 400 oven for 45 to 60 minutes or until the chicken is internal temperature of 165.
- Remove. Let it cool about 10 minutes. Ready to serve!
