Love me some goooooooooooooooooooooood egg salad. And, dill pickle egg salad is a notch above the traditional egg salad, I think.

But, I don’t want it to be sweet. Don’t want the added sugar!

And, besides I’m really loving the flavors of something slightly sour, briny and creamy. 

This recipe has it all!

How to Make Egg Salad

Making dill pickle egg salad is absolutely a no brainer.

Hard boil your eggs. You can do it ahead of time. Refrigerate. Then use to make your salad the next day.

It’s must a matter of combining all the glorious ingredients into a bowl then enjoying just by itself, on a piece of sourdough toast, scooped on a tortilla chip. Whatever your sweet littl’ heart desires. 

Egg Salad with Pickles

Now good Southerners make their egg salad with sweet pickle relish. 

Sweet pickle relish can have about 4.2 grams of sugar per tablespoon.

On the other hand, dill pickles, chopped (kosher or the GrillO pickles), can have 1 gram or less. 

In fact, check the GrillO spear pickles, and you’ll see that there are zero grams of sugar. That’s a good thing.

The Best Egg Salad

The best egg salad, I think, is one that has texture, It’s creamy. You can mound on toast. You can make a delicious sandwich.

You can regulate the thickness and the creaminess. If you want it more spreadable, like a creamy peanut butter, then don’t put in any more pickle juice liquid. You can always add as needed if you see that you need it. It doesn’t compromise or alter the taste, I think, significantly.

Egg Salad Healthy

This egg salad is hands down healthy. 

You’ve got pasture raised eggs. Fresh herbs. Pimentos! No, they’re not just for pimento cheese spread. Avocado mayo, a much healthier version of the creamy goodness that, quite frankly, I can’t taste one particle of difference in from the less healthy versions of mayo. 

According to Fine Dining Lovers:

Pimentos are high in vitamin C, vitamin A, and vitamin K, and are also a good source of vitamin E. Pimentos are low in saturated fats and very low in cholesterol. Pimentos are a good source of essential minerals such as Potassium, Copper, Manganese and Iron

Easy Healthy Egg Salad

Try you hand at this easy healthy egg salad. And, if you’re looking for some killer deviled eggs, well, here you go!

If you want your egg mixture finer, then have at it. Crush those eggs. I like a little texture to mine.

This egg salad will last refrigerated for several days. It’s a great snack. Perfect for a charcuterie. 

And, here’s another thing, brilliant I think. Par boil some small diced Yukon potatoes and add into this recipe. Now you have a glorious egg/potato salad! Just a thought. Hummmm…

Dill Pickle Egg Salad

Yield: About 3 cups


  • 6 hard boiled pasture raised eggs
  • 1/3 cup pimentos, drained
  • 1/2 cup dill pickles, diced, about 3 Tbl. of juice
  • 1/3 cup celery, small dice, with leaves
  • 1/4 cup, packed, fresh dill, chives, parsley, chopped
  • 1/3 cup avocado mayonnaise
  • Salt and Pepper to taste


  1. In a medium mixing bowl, chop the boiled eggs into a crumbly mixture.
  2. Add the remaining ingredients.
  3. Blend and mix together into a creamy egg salad. If you want more creamy add a tablespoon or two of pickle juice.
  4. Refrigerate. Lasts for several days
