Orange Marmalade Spicy Soy Sauce

Making sauces is a great way to get rid of little bits of this and that!  And, that’s just what I did with this sauce~~rather than throwing out a dab of ketchup  or just a tad of rice vinegar, I decided these small amounts would be perfection in a sauce! This ‘Orange Marmalade Spicy Mahogany Sauce’ is rich and thick and the color of mahogany~~it shines and glimmers and tastes amazing on pork or chicken.  What a great way to liven up just a regular piece of meat~~you really don’t need to do much to the meat other than sea salt and pepper, throw it on the grill, then let the sauce bring out all the other flavors!

Orange Marmalade Spicy Soy Sauce

Makes:  About 1 cup

What you need:

1/4 cup ketchup

1/4 cup soy sauce

1/2 cup orange marmelade

1 tsp rice vinegar

2 tsp Korean Sweet & Spicy Sauce (Annie Chun)~~or substitute your favorite hot sauce!

2 tbl chopped chives (optional)

Orange Marmalade Spicy Soy Sauce

What you do:

Put all the ingredients in a sauce pan over medium heat.  Bring to a low simmering boil.  Cook for about 15 minutes and the sauce will thicken.  Optional:  Add chives.  Serve on pork or chicken!
