They’ve got lots of essential nutrients.

So, what’s the flavor profile of these pickled deviled eggs?

  • Tangy and Zesty: The pickle brine adds a tart, vinegar-forward note.
  • Creamy and Savory: Traditional filling ingredients like mayonnaise, mustard, and egg yolks balance the tang with richness.
  • Herbaceous: Fresh or dried dill provides a distinctive herbal flavor that complements the pickles.
  • Crunch: Finely chopped pickles, pickled red onions and capers in the filling  add a pleasant crunch.

Pickled Deviled Eggs

Yield: 16 to 18 deviled eggs

Ingredients

  • 8 to 9 pasture raised eggs, hard boiled, peeled, cut lengthwise in halves, yolks and whites separated
  • 1/4 cup kosher dill pickles, finely diced + extra for garnish
  • 2 Tbl. pickled onions, finely diced
  • 1/4 cup fresh dill, minced
  • 3 Tbl. capers, drained well
  • 1/3 cup avocado mayonnaise
  • 1 Tbl. stone ground mustard
  • Salt to taste

Instructions

  1. In a pie plate, put the egg yolks and mash into a fine pebbly mixture.
  2. Add all the ingredients and blend into a creamy mixture.
  3. Scoop the creamy filling into the egg white 'holders'.
  4. Garnish with dill.
  5. Refrigerate several hours before serving.
