Have some chocolate ganache to drizzle on this amazing pineapple coconut buttermilk dump cake! Perfect to take to a dinner party or covered dish dinner!

Ingredients

  • Preheat oven to 375
  • 16 oz. pineapple chunks with juice
  • 1 cup buttermilk
  • 1 1/2 cups coconut, shredded, sweetened
  • 1 cake mix (15.25 oz), white
  • 8 Tbl. butter, salted, cold, cut into small diced pieces

Instructions

Grease the cake pan well. I used an 8 x 13 baking dish.

Put the pineapple in a food processor and pulse into a mixture. Pour into the cake pan.

Add the buttermilk and one cup of coconut. Swirl and blend somewhat.

Take the cake mix while it's still in the bag and mash out as many lumps as possible. Pour on top the pineapple and buttermilk.

Add the remaining coconut on top and top with the diced butter.

Bake in a preheated 375 oven 38 to 40 minutes. Remove and let cool. Scoop and serve.
