Yield: 2 folks

Ingredients

  • Cooking spray
  • 1 (3/4 lb.) salmon filet, skin on, thick in the middle, about 1 ½ to 1 ¾ inches
  • 1 tsp. sea salt, divided
  • 1 tsp. coarse ground pepper, divided
  • 4 cups mixed fresh greens, spinach, arugula, baby kale, etc.
  • 4 Tbl. Bolthouse Yogurt Bleu Cheese Dressing
  • 2 eggs, large, organic

Instructions

Sprinkle half the salt and pepper on the meat side of the salmon. Coat with cooking spray. Set aside.

Put a non-stick medium sized skillet on a medium blaze. Let it get hot. Apply cooking spray. Put the salmon in the hot skillet meat side down. Cook for 3 minutes. Flip to skin side up and cooking another 3 minutes. Remove to a plate. Cover with a lid and let it rest until ready to plate.

Meanwhile, give the skillet a good wipe with paper towels. Return to a medium blaze. Coat with cooking spray. Crack the two eggs into the skillet.

Sprinkle with the remaining salt and pepper. Cover and cook to you desired finish.

Put equal amounts of the greens in two dinner bowls. Drizzle on equal amounts of bleu cheese dressing.

Remove the skin from the salmon. Divide into two portions and place atop the greens. Add the cooked egg. Bon appetite!

Notes

When steaming your egg, sometimes you need to use a rubber spatula to gently move the whites around and into the skillet so as to cook more evenly.
