You choose the type of sausage you like. Kielbasa. Polish. Turkey. Smoked. Andouille. Whatever floats your boat. Then you’re going to load up on earth eats. Fresh veggies!

For this recipe, I definitely love the grass-fed Polish beef sausages from Costco. They’re super versatile and come individually wrapped in packages of four with a total of twelve. 

The reason they’re versatile is because they’re like oversized hot dogs. So perfect for this meal.

Anything you can do in one pan makes life easier. Makes clean up less onerous. And, makes cooking more pleasurable.

Now, you’re going to pre-cook your sweet potatoes. And, I used a Japanese purple sweet potato. If you have an Asian market in your area, check it because you’ll probably find them there.

Actually, the purple hue in this potato comes from an antioxidant. This is a good thing. These potatoes are loaded with potassium and fiber plus they’re a great sour of vitamin C. 

And, like most sweet potatoes, ironically they’re lower on the glycemic index. Yes, a great choice for those on a diabetic diet 

Easy One Pan Dinners for Two

This meal can easily feed two with leftovers for lunch the next day. That’s the tastiness of this recipe. It’s even better the next day. Just slowly heat in a cast iron skillet on medium low. Cover and let it steam until all juicy and warm.

Beef, turkey and chicken sausages are just as tasty in my opinion as the pork sausage. Now, I can put down some pork sausage and I love a combination of meats sometimes. But, if you’re not a pork lover, then go for the other types.

Easy One Pan Sausage Vegetables

One Pan Polish Sausage & Potatoes

Yield: Serves: 2-3

Ingredients

  • ¼ cup avocado oil
  • Fresh Herb Bouquet, thyme sprigs, rosemary sprig, oregano sprig, parsley sprigs
  • 1 cup sweet onions, French cut
  • 16 oz. brussels sprouts, trimmed and sliced lengthwise in halves
  • 3 cups sweet potatoes, bite size dice, precook to al dente
  • 1 Tbl. No Salt Spice Mixture, Kirklands
  • 2 tsp. garlic granules
  • 1 tsp. sea salt
  • ½ cup water, can substitute chicken stock
  • 1 lb. Polish Sausage
  • 1/3 cup maple syrup

Instructions

  1. Put a large braising skillet over medium high heat. Let it get hot. Add the fresh herbs and fry/sauté a few minutes until the fragrances come out and the leaves start fall off the stems. Use tongs to remove the stems and discard. Add the onions and sauté about 2 minutes.
  2. Add the brussels sprouts and blend in with the onions. Reduce heat to medium. Cover and let this mixture cook about 5-7 minutes stirring a couple of times. Add the potatoes. To precook the potatoes, peel and dice into bite size chunks. Put in a microwavable bowl with about ¼ cup of water.
  3. Cover and microwave on {High} about 7-8 minutes until somewhat tender. Mix the spice mixture, garlic and salt in a small bowl. Sprinkle over the mixture. Blend well. Add the potatoes, blend, cover and continue cooking another about 5-7 minutes.
  4. Add the water to deglaze the pan. Blend well. Add the sausage and pile the vegetables over top of them. Cover and cook about 10 minutes on medium. Reduce heat to medium low, cover and let this mixture steam another about 8 to 10 minutes or until the sausages plump up and are completely hot throughout.
