OK, who doesn’t love a one skillet meal. And, one skillet chicken dinner recipes are what we need in our stash of easy meals on any night!

Nothing’s better than chicken with penne pasta. Penne pasta, and I love to get the penne with small ridges in the noodles, is all done in one pot. Yep, we’re gonna put those noodles right in the pot with the chicken and sauce.

These penne noodles will absorb and take on the flavors so much more boldly than if we cook them separately then toss them in. However, if you want to do that, you surely can.

Another thing about this pasta recipe with chicken is that there’s added nutrition with the ground almonds. I mean talk about an agent that helps thicken the sauce.

In no time at all, really about thirty minutes, you’ll be eating a gourmet dinner. Sure you can buy those boxes that put everything together for you, then you follow the instructions and make your meal, and this is kind of like that.

Believe me, this dish will be a meal! Serve with a nice salad and some hot baguette and you’re in business. Here’s one other thing, if you want to use another type of small pasta, then go right ahead. It lends itself to even elbow macaroni!

It’s a staple that can elevate so many other ingredients like this Mezze Rigatoni and Peppers!

One last thing about this dish, if you want to throw in some fresh spinach leaves, then, oh, lawsy, do it! Those spinach leaves will wilt. You’ll be adding more flavor and nutrition and it will be ahhhhhmazing!

Yield: About 4 to 5 folks!

This one skillet chicken pasta will have you thinking you're eating an an Italian cafe in Tuscany! All about simple fresh ingredients! And EZ!

Ingredients

  • 2 to 2 ½ lbs. chicken breasts, boneless skinless, sliced through the middle into thinner pieces
  • 6 Tbl. extra virgin olive oil, divided
  • 1 (1.25 oz.) packet onion soup mix + 2 cups water
  • 2 Tbl. nutritional yeast
  • 1 Tbl. Italian seasoning mixture
  • 2 tsp. salt
  • 1 tsp. pepper
  • ½ tsp. red chili flakes
  • 1 can (14.5 oz.) diced tomatoes + 1 cup water to rinse can
  • 1 (24 oz.) jar marinara sauce
  • 4 garlic cloves, smashed
  • ½ cup ground almonds
  • ½ cup parmesan Reggiano
  • 2 cup penne pasta
  • 1 ½ cups chicken stock
  • ½ cup fresh basil leaves + more for garnish
  • ½ cup ricotta cheese, optional, for serving

Instructions

In a large heavy skillet over medium high heat, add four tablespoons of olive oil and the chicken breasts and brown on each side (about 2 minutes per side). Drizzle the remaining olive oil to the chicken.

Put the onion soup mix, water, nutritional yeast, Italian seasoning, salt, pepper and red chili flakes in a measuring cup and blend together. Pour over the chicken.

Add the tomatoes/water, marinara sauce, garlic and blend. Cover the skillet over medium high heat and let it cook about twenty minutes. Check a couple of times and stir.

Add the ground almonds and parmesan Reggiano. Blend well. Add penne pasta and blend. Cover the skillet. Reduce heat to medium low and cook for another about 18 to 20 minutes testing noodles which should be al dente. Add chicken stock as needed. Blend occasionally.

When the noodles are al dente, add the fresh basil leaves. Cover and remove the skillet from the heat and let it absorb the goodliness about 10 minutes.

Serve with a scoop of ricotta cheese (optional) and extra fresh basil.

Notes

The thin chicken breasts will tear apart as it cooks and that's ok! It almost becomes chicken tenders!
