Mint Basil Pea Soup

Yield: 4-6 folks

Ingredients

  • 1 tsp. salt
  • 1 tsp. garlic powder granuales
  • 1 tsp. ownion powder
  • 1/4 cup fresh basil leaves
  • 1 Tbl. fresh mint leaves
  • 8 oa. peas, previousky frozen
  • 8 oz. leaf spinach, previously frozen
  • 1/2 cup coconut milk
  • 16 oz. Kettle and Fire Chicken Bone Broth
  • GARNISH
  • Extra Virgin Olive Oil Drizzles on soup
  • Grated Parmesan Reggiano Cheese

Instructions

  1. Put all of the ingredients in a food processor and pulse into as fine a mixture as possible.
  2. Transfer this soup mixture to a large pot over medium low heat. To get a smoother texture use an immersion blender. It is optional to strain the mixture.
  3. Let the soup get hot, then serve with a drizzle of EVOO and grated parmesan.
